It’s the time of the year to slip in gorgeous dresses, hang around in shorts and let your foot loose wearing slippers. And we know British BBQ Season is in along with the gorgeous weather.

Barbecued Food, Spicy Flavours, Chilled Beer, Skewered Vegetables is a part of the BBQ tradition that we celebrate with friends and family every year. Kids chill out spending hours having Water Gun fights, munching snacks of their choices and also choosing their choice of rainbow vegetables to thread onto the Sticks. Oh, what fun!!

Whilst we  enjoy the mild heat, lazing in the garden over the bank holiday weekend, we also enjoy gossiping, drinking chilled mocktails/cocktails, beer as it suits everyone. This year whilst we enjoyed our customary burger, Paneer Tikka’s with an array of dips, we innovated a tortilla pizza in a jiffy to satisfy some instant cravings and they were all gone before we realised.

The tortilla pizza had some bbq marinated chickpeas, sliced vegetables, and ranch dressing!! We actually did not realise that there was no Cheese to it!! (Shhh we forgot to grate some )It was an absolute guilt free pizza that can be enjoyed with ease.

When Chippa, UK’s only free-from condiment range asked me to create a  free-from BBQ recipe to rejoice the  National BBQ Week celebrations ( (30 May – 5 June), I recreated this recipe yet again in under 30 minutes.Condiments from Chippa were my companions to make it a Free-from meal at ease. They are suitable for everyone – free to eat happy.

Using Chippa’s condiments, I made my very own BBQ sauce and Ranch Dressing that is completely Vegan,Egg Free and Gluten free. Believe it or not !! There was no compromise in flavours or taste in this free from Treat.  My 8-year-old son enjoyed it without any complaints and helped himself to an extra serving. What more can I expect!! In fact, none at home knew about going free-form when I made them again. So a Yay Moment !!

Coming back to this super breezy easy recipe, they can be made in under 30 minutes. Chippa Brand is all  about British Jollyness and fun, so I served my Pizza in Cast Iron Skillet. Do try them and let me know how much you enjoyed them.

Total Time: 30 Min | Serves 4

Bbq Chickpeas Tortilla Pizza
INGREDIENTS
4  Tortilla’s ( Gluten free)
1 Can Cooked Chickpeas / Garbanzo Beans approximately 400g
BBQ Sauce
Ranch Dressing

BBQ SAUCE
For the Tomato Sauce and Worcester Sauce, I used Chippa Brand and knew they are Gluten-Free & Vegan.
1 Cup Tomato Sauce
1 Tsp Worcester Sauce
1/2 tsp  Soya Sauce ( Check for Gluten free label)
1 Tsp Apple Cider Vinegar
1/2 Tsp Tabasco Sauce
2 Tsp Brown Sugar
1 Tsp Garlic Powder
1/2 Tsp Lime Juice
Salt to taste

RANCH DRESSING
For the Mayonnaise, I have used Chippa Brand May- O. They are Egg Free, Vegan & Gluten Free.
1 Cup Mayonnaise
1 Tbsp finely Chopped Dill
1 Tbsp finely Chopped Chives
1 Tbsp finely Chopped Spring onions
2 Tbsp finely chopped Parsley
1 Tsp Garlic Powder
1/2 Tsp Pepper Powder
Squeeze of 1/2 Lime
Water ( if needed )

GARNISH
Chopped Avocado
Chopped Onions
Finely chopped Coriander Leaves
Chilli Flakes
Lemon Wedges

DIRECTIONS
Preheat the oven to Gas Mark 4 and prepare 2 Cast Iron Skillets.

To prepare BBQ Sauce at home, add all the ingredients for BBQ Sauce into a saucepan and simmer over low flame for about 5- 7 minutes until they thicken.Remove from heat and allow it to cool down. They can be stored in an airtight container in the fridge for up to 5 days.
Marinate the Chickpeas into the BBQ sauce and set aside.

Prepare a Vegan Ranch dressing by mixing together all the ingredients.If the dressing is a little too thick, stir in 2 tsp of water and mix well. Refrigerate until ready to serve.

Lay the Tortilla on the Cast iron skillet. Spread a layer of the prepared bbq sauce on the tortilla leaving 1/2 inch from the edges. Scatter a few marinated chickpeas onto the tortilla’s and place them in the oven. Allow them to heat for 12- 15 min approximately until the tortilla’s get a bit crisp.

Remove them from the oven, garnish with chopped Avocado’s, chopped red onions & coriander leaves. Scatter a few drops of Ranch Dressing all over. If you like a little more heat add chilli flakes as desired. Squeeze some Lemon Juice if you like too.

Notes:
Ranch Dressing
If you are not keen on Vegan Dressing, add some buttermilk to the above ranch dressing.

Variations
You could alternatively use any other kind of beans instead of chickpeas too for a variation. Use more vegetables like Sliced Peppers, Tomatoes etc. Some sliced Jalapeno / green chillies for heat.
If you do have some Vegan Cheese at hand, do shred them over pizza while placing them in the oven.
