Coffee Chocolate Cake with a Maple Butter Cream Frosting!! I am really at loss of words to describe this marvellous flavour some cake.
This Coffee Chocolate Cake is a layered cake with infused Coffee Chocolate Flavours in the cake, frosted with the natural essence of maple syrup and topped with chocolate ganache. Well, Chocolate indulgence didn’t end here. I add a pile of chocolate shards to finish off the cake. You could use some chocolate curls too. How exciting isn’t it?
I made us this cake in November for our official house warming ceremony. You may or may not be aware that we officially moved to our ‘New’ Home in October. It had been an exciting and taxing phase those 3 months when I had almost forgotten my baby blog existed. I was spending 50% of my day with my handyman and at the hardware store, plumbing stores shortlisting and picking the needed stuff for the house.
We were also redecorating the downstairs clock room before moving in, as the house had fixtures from early 80’s. The light fixture was so long that we could do a head bang, Loo with a stainless steel lever and yuks the carpet !! That was last thing we could think off.
Finding the perfect things to make it our fancy contemporary clock room was adventurous. Amidst this either the handy man or the Tile Stores in Hampton – one of them goofed up on the quantity. We didn’t realise until the handyman began his work and he tells me ” Sandy = you have only ordered one third of the portion needed and I really couldn’t believe” We had already gone overboard, redoing the whole house. Since the tiles we chose comes exclusively from Italy, I had call the Tile Emporium and place an order for 3 times the previous quantity.
When I called my better half, he was in between his meeting and said – just paint the walls. We have gone over board. Just hung the phone call and went ahead with the order. But what was bothering me, rather ‘us’ was who went wrong in quantity of tiles – was it the Tile Emporium or was it the handyman?
A little bit of detective work and we found the piece of scribbled paper work with measurements and it was my handyman’s handwriting. I ensured to take it to him and made sure he understands he was at mistake and not the rest. He is a cheerful handyman who can lighten up the whole atmosphere with his “Mama Mia..”
These little instances still stay with me and all the extra hassle paid off. Even after 4 months, We still have friends and family saying ” Wow – looking at the cloakroom !” What more can I ask for. Every little personal touch made the difference.
Oopsie, I got carried away sharing my experience with the cloakroom. We celebrated with a handful of really close friends and this cake was the star for the celebration.
Coffee Chocolate Cake with Maple Butter Cream Frosting
Serves 8 – 10 | Time Taken :Â 1 hour in total
Ingredients
Cake Ingredients
2 Cups Self Raising Flour
1 Cup Unsalted Butter, softened
11/2 Cup Caster Sugar
75gm Plain Chocolate
1/2 Cup Unsweetened Cocoa Powder
1 Cup Hot Coffee Decoration
4 Large Eggs
1 Tsp Baking Powder
2 Tsp Baking Soda
1 Tsp Vanilla Essence
1 Cup Milk
Maple Buttercream Frosting
1/2 Cup Maple Syrup
1 Cup unsalted butter, room temperature
3 CupsIcing sugar
1/4 Tsp salt
2 – 3 Tbspn single cream/ milk
Chocolate Ganache
2 Cups of Semi Sweet Chocolate Chips
1 Cup of Double Cream
Equipments Needed
OXO Good Grips Non Stick Pro 22 cm Sandwich Tin
OXO Squeeze and Pour
Hand blender with Whisk attachment
Parchment paper
Directions
Preheat the Oven to 180 C.
Prepare Hot Coffee Decoration by stirring 2 Tsp of Instant Coffee to 1 Cup of Hot Water.
Cream together butter and sugar in a bowl. Whisk them until creamy and smooth.
Add the eggs to the butter and sugar one-at-a-time while beating then the milk.
In a separate mixing bowl ,Add the dry ingredients together – Self Raising Flour, Baking Powder, Baking soda and Coco powder and give it a good stir. Add in the wet Ingredients – Hot Coffee decoration and Milk whisking between each addition.
Finely chop the chocolates and add them to OXO Squeeze and Pour. Place them in microwave , stirring in between after every 20 seconds.
Add the melted chocolate to the large mixing bowl containing the rest of the ingredients and stir well. Add the butter-sugar-egg mixture and whisk until a well combined batter is achieved.
Grease 2 Sandwich Cake tins of 21cms with a lil butter, line with parchment paper and dust a bit of coco powder all around. Pour the cake mix in the sandwich tin up to 3/4 and place it in the preheated oven.
Bake for nearly 35 minutes until a wooden skewer inserted comes out neat. Allow the cake to cool on the wire rack.
Maple Syrup Butter Cream Frosting
To prepare the frosting, cream butter and sugar until light and fluffy,
Add Maple Syrup, pinch of salt and whisk to combine.
If the consistency is thick, add single cream or milk and mix to achieve the desired consistency.
Chocolate Ganache
Heat Double Cream in a pan until it begins to boil. Tip it over onto the Chocolate Chips placed in the bowl. Whisk until the chocolate has melted smooth and has a glaze.
Assembling
Using a long serrated knife , Trim the top bumpy bits of the coffee chocolate cake ( if any) and make it uniform.. Save the sponge for making some Tiramisu Cups.
Spread half the frosting on top of one of the cakes. Place the other cake on top and spread the rest of the frosting on top and sides with the remaining frosting.
Chill the cake for at least 20 minutes before pouring chocolate ganache over the Frosting.
Pour the Ganache over the cake, allowing to drip onto the sides.
Decorate the Coffee Chocolate Cake with Chocolate Shards or a pile of Chocolate Curls .
