Chocolate Cupcakes with Salted Caramel Buttercream to celebrate Mother’s Day

We had Ma and Pa with me for 2 weeks before they travelled to US. I had all the plans to work on this post then. Our routines were busier than expected, but fun!! They were just getting used to this ever changing British weather.. Tell me all about it. First thingy we do every morning is to check the weather in BBC and plan the day. As we are nearly in spring, our first car boot sale began yesterday in Walton on Thames. There were more sellers than buyers because of the windy weather. Oh what fun! My mum would have loved to accompany me but.. sadly her tickets were already booked.
She enjoys thrift markets in UK and always amazed at the different collectibles people sell.
“Never mind ma” – when you return in June, a trip to a Flea Market is for sure 🙂
Did I tell you about the vintage French Milk Bottle and a pair of Noritake Japanese bowls were my my finds yesterday. I am totally in love with them and are sure to star them soon in my shoot.
Coming back to these Chocolate Cupcakes with Salted Caramel Buttercream, cupcakes are really easy to make and I have adapted the recipe from here. I was so keen to use my newly found muffin wrappers from the pound store.. Ain’t they classy? After these cupcakes were cooked, I realised my pipping bags/ nozzles are not to be found. Phew!! After surfing through the web, I came across this gorgeous link where she shares a few ways to pipe just with ziplock bag. How convenient and handy it is, isn’t it?

CHOCOLATE CUPCAKES WITH SALTED CARAMEL BUTTERCREAM
Makes 6 | Time Taken : 50 Min
Ingredients
120g Plain Flour
20g Cocoa Powder
140g Caster Sugar
1.5Tsp Baking Powder
A pinch of salt
1 Large Egg
1 Tsp Vanilla Extract
40g Unsalted Butter, softened
120ml Milk
Salted Caramel Buttercream Frosting
115g (1/2 Cup) Unsalted Butter softened
345g (11/4 Cup)Icing Sugar
1 Tsp Vanilla Extract
2 1/2 Tbsp of Salted Caramel Sauce ( Either Store bought or homemade)
1 Tbsp of Milk
Directions
Preheat the oven to 170 C (325 F) , Gas Mark 3. Line the muffin wrappers in your muffin tin.
Add Flour, Cocoa Powder, Sugar, Baking Powder to a bowl of a Free Standing mixer with a paddle attachment. Mix them until you obtain a sandy consistency.
In another bowl, add all the wet ingredients – Egg, Vanilla Extract and Milk together. Whisk them gently until well combined.
Add the wet ingredients to the Dry Ingredients in 2 portions,beating the mixture well, ensuring there are no lumps.
Scoop the batter with an ice cream scooper and ladle them into the muffin wrapper. I could make 9 of these with this recipe.
Bake them for 20 minutes.
For making Salted Caramel Buttercream – beat unsalted butter, icing sugar,Salted Caramel,vanilla extract and milk with an electric hand mixer until smooth, spreadable and fluffy. Fill the pipping bag with frosting and fit a decorative nozzle of your choice. Pip swirls on top of each cupcake. I could decorate 6 Chocolate Cupcakes with Salted Caramel Buttercream with this measurement.

Sandhya – You sure have a good knack for finding excellent props!! The cupcakes look amazing and I would never have guessed that the muffin wrappers were from the Pound store. Love the tea pot and the cake stand too.
