You will just not believe how easy it is to cook this fragrant & fluffy Vegetable Pulav Rice. Well, there is nothing to worry. I’m going to walk you through the process with detailed pictures. Pulao Rice is a stand alone rice dish, but you can easily customise it to your liking :).
I’ve been making Pressure cooker pulao rice ever since I have known. My mum has always made Pulao Rice in a pressure cooker and this recipe is nearly as how she makes it .. Okay, let me admit, I have tweaked in a teeny bits of the recipe…
My mum always made Aloo Paratha, Vegetable Pulav rice and Curd Rice on Sunday’s and I could not have imagined a weekend without it. Amma had perfected her Rice recipe over years and she has always made it in pressure cooker to speed up the cooking time. I totally agree!!

WHAT IS PULAO RICE { Pulav Rice }?
Vegetable Pulav Rice is a simple stand alone Rice dish, loaded with garden vegetables and flavoured with whole spices. It is quite different from Vegetable Biryani.
For those not familiar with Veg Biryani, let me tell you – Vegetable Biryani is a spicy flavor packed rice that is cooked in alternate layers of rice and gravy.If you are looking for a rice dish that is more than simple rice, then Biryani is what you need to try.
HOW TO MAKE VEGETABLE PULAO STEP BY STEP IN THE INSTANT POT?
Wash the rice at least 6 times under running tap water and soak them in water for atleast 30 minutes. Prepare the vegetables by washing, peeling and chopping them.
In Saute mode high, heat ghee in the inner pot of IP. Add whole spices – saute, followed by addition of onions, ginger and salt. Saute again until translucent.
Add Rice, saute for 3-4 minutes until fragrant. Add the remaining vegetables, spice powders and salt.
Switch off the Saute mode. Add enough water, just enough to cover the rice. Select the pressure cook setting high for 4 minutes. Once the cooking is done, allow the pressure to release naturally for 10 minutes, followed by QPR. Fluff the rice through with a fork.

Instant Pot Vegetable Pulao Rice Recipe | Pulav Rice | Pilaf Rice

- 1 ½ Cup Long Grain Basmati Rice
- 1/4 Cup Carrots chopped
- 1/4 Cup Potatoes chopped
- 1/4 Cup French Beans Chopped
- 1/4 Cup Frozen Green Peas
- 1 Green Chilli sliced into 2
- 1 Red Onion sliced { Approx 1/4 Cup }
- 1 Tbsp Grated Ginger
- Salt to taste
- 2 Tbsp Ghee { Use Oil for Vegan Option }
- 2½ Cup Water
- 1 Tsp Garam Masala
- 3/4 Tsp Chilli Powder
Whole Spices
- 2 Bay Leaves
- 1 Inch Cinnamon Stick
- 2 Black Cardamom
- 2 Green Cardamom
- 6 Cloves
- 10 Peppercorn
- 1 Tsp Shahi Jeera { Caraway Seeds }| Cumin Seeds
Instructions
Preparing the Rice & Vegetables
- Wash the rice under running tap water at least 6 times and soak it for 30 minutes.
- In the meanwhile, chop the vegetables and set them aside.
- After 30 minutes, drain the water from the rice into another pan and use it for cooking.
Making Instant Pot Pulao Rice
- Remember to place the Inner Pot inside the Instant Pot. Put instant pot on sauté mode high. When the screen displays HOT, add ghee/ oil. Once heated, add the whole spices on the table and saute for a minute.
- Add ginger, sliced onion and 1/2 Tsp of Salt and saute for another 3 minutes until onions turn translucent.
- Add the soaked rice and saute for another 3-4 minutes until slightly roasted.
- Add the rest of the vegetables, garam masala, chilli powder and salt to the rice and stir to combine.
- Switch off the sauté mode and add 2 1/2 Cups of Water.
- Select the manual (or pressure cook) setting, make sure the pressure is set to high and set the timer to 4 mins. It takes approximately 7 minutes+ for the IP to kick in.
- Cook till done. Once the timer beeps after 4 minutes, allow the pressure to release naturally for 10 minutes and then QPR any remaining pressure. Just as the Safety Pin drops, open the pot and allow the Vegetable Pulav to sit undisturbed for 5 minutes. Fluff the Rice with a fork.
Making Pulao Rice in Pressure Cooker on Stove Top
- Soon after you saute the vegetable in your cooker pan, pressure cook the Rice for 2 whistles and turn it off. Allow the steam to release naturally. Fluff up the rice with a fork and serve them hot.

Sandhya, Aloo paratha, boondi raita and veg pulao used to be a menu for my birthday every year while growing up. Brought a smile to my face when you mentioned it. Instant pot is a real live save for us busy moms. I have learn to depend on it more and more while running with my daughter to soccer practice, various classes and what not.

I am just learning to use Instant Pot regularly. Tefal’s Cook4Me has been my to go gadget so far. So the cooking time and method is slightly different with Instant Pot.

If you dont have WHOLE spices, it should be listed how much GROUND to use !

Hi Mary, Pulao rice is flavored with Whole Spices and not ground spices. If you do not have Whole spices, I will recommend you try Vegetable Biryani or any other Indian seasoned rice.
