Does indulgence really need to be compromised?? Well in my opinion Not really! Pancake is indulgence in my Son’s opinion and it can be had for breakfast,lunch and dinner overloaded with whipped cream and maple syrup. Well this did kindle a thought in my head on how to add a portion of healthy ingredient.
One evening as always when I was having my ‘ME’ time tranquillising in my couch, I was browsing through Pinterest for inspirations. I came across a lot of bake recipes where they were using alternate flours and this did tickle my thoughts to read further on the healthy benefits. I was amazed at how people go about swapping Alternate flours like Amaranth Flour, Oats Flour, Whole Wheat, Coconut Flour, Almond flour to our regular Plain Flour just like the recipe for Keto Pancakes via Recipes From A Pantry. After a good nights sleep and sorting the kiddos out to their respective Schools, I decided to work on a healthy pancake recipe. A total trial and error attempt with replacing my regular plain flour to Alternate flours and trust me it was a success with flavours too.
I was quite hesitant,not knowing how my 8 and half years son would relish or relinquish the ‘New’ flavours and a mild subtle fragrance from the pancake. Verdict – He actually did not make a fuss and asked for more 🙂 The husband loved it fruit loaded, in fact he had a segment of his main course as these oats amaranth pancakes.
A total satisfied experiment!! And I will make it yet again. And why not ?? When the masses at Zwilling sent me a sturdy 30cm round CastIron Staub Pancake Pan. The cast iron material of the pancake makes is easily usable on any type of cooker range. Heat is distributed evenly on this pan and can be cooked on any portion instead of just the centre, allowing to the cast iron material of pan. This allows me to make 2 pancakes at a time in a go. They are priced at 99.95£ and an investment for lifetime again:) It is an awesome Christmas Present for close family and friends too.

Ingredients
- 60 g Oats Flour
- 60 g Amaranth Flour
- 3 tsp Caster Sugar
- 1/2 tsp Salt
- 1 cup Semi Skimmed Milk
- 1.5 tsp Baking Powder
- 1 tsp Vanilla Extract
- 3 tsp coconut oil
- 1 Large Egg, Slightly Beaten
Instructions
- To Make Oats flour at home ,by place old fashion oats in your blender and blend for a few seconds until you have the flour.
- Combine the dry ingredients together in one bowl and the wet in another.
- Now slowly stir the wet in to dry ingredients as you add them, until a completely blended batter is achieved.
- Heat the Staub Pan cake Pan . Coat the pan with a tissue dipped in oil. Pour 2 small ladle of the batter onto the pan, allowing it to spread on its own. When the bubbles begin to appear, flip the pancake and cook for another 1 minute or so. The pancakes would rise about 1/2 inch. Fry until they turn slightly golden.
- Repeat the process until all the batter is used up. Keep the pancakes warm by stacking them in an oven ( heated at the lowest setting). I could make 10 Pancakes with this measurement.
- Serve Fluffy Gluten free Oats Amaranth Pancakes with strawberries and maple syrup. If you like, you could dust some icing sugar on the strawberries too.

Ooh yum these sound delicious. I’ve never experimented with alternate flours but have always been intrigued to give it a go. Did it bring much of a different flavour rather than using plain flour? Also, love the height of those fluffy pancakes – the thicker the better in my opinion!

I have had my own reservations too Laura. The flours have their own fragrance/ flavor as opposed to the Plain Flour. But when coupled with fruits, maple syrup – you really can’t make out much.

This has become my standard recipe for trying out new flours for taste. It’s been amazing. So fluffy and light!
I added an extra 30g of coconut flour to the recipe and baked them like cupcakes. It worked!
