Sev Puri is a popular Chaat { Indian Street Food } from Mumbai which will leave you with tons of flavour in a single morsel.
What is Sev Puri ?
Sev Puri also known as “Sev Batata Puri” is an Indian Street food snack where the layers of ingredients are assembled on a flat crisp called Papdi.
As such, its a myth that Chaat is quite difficult and cumbersome task. There is some easy preparation needed in advance and then assembling a chaat just takes a few minutes, just like this Sev Batata Puri.
What are the layers of Ingredients in Sev Puri?
Sev Puri Papdi’s / Puri’s – These are thin flat disks of crisps made with Whole Wheat flour or a combination of WholeWheat Flour and All Purpose flour { Maida }. Make them at home or buy them from an Asian grocery store.
Potato – Also called as ‘Batata’. The Potatoes are boiled well, peeled and cubed or roughly mashed. I do season them with a bit of salt.
Green Chutney – Also known as Coriander Chutney. This Chutney is absolutely essential in the preparation of any chaat.
Red Chutney – Also known as Tamarind Chutney or Dates Tamarind Chutney. This Chutney is also an essential ingredients for chaat.
Sev – Sev is a gram flour thin noodles that can be bought from an Indian stores.
Onions – Finely Chopped Onions will add a crunch to the Sev Puri Chaat.
Spice Powders – Red Chilli Powder, Roasted Cumin Powder & Chaat Masala.
The Best part about making chaat is that chutney’s can be made a few days in advance and stored in refrigerator. If I manage to make large portions, I store them in individual small containers and freeze them. In that way, Chutney’s are always ready at home and you can enjoy street food in minutes! Sev Puri is best enjoyed with papdi and Yogurt is not added on Sev Puri.
If you enjoy drizzling yogurt over your sev puris, the dish actually turns out to be papdi chaat along with additional ingredients like chickpeas etc.
If you prefer to use the Puffed Puri { used for pani puri}, you sure can.. , add yogurt to the same fillings as sev poori and serve. It is called Dahi Puri.

Ingredients
Ingredients for Sev Puri
- 24 Papdi
- 1/2 Cup Green Chutney
- 1/2 Cup Dates Chutney
- 2 Large Boiled potatoes peeled, chopped in little chunks, seasoned with salt
- 1 Cup Nylon Sev
- 2 Tsp Cumin Powder
- 2 Tsp Chaat Masala
- 1 Tsp Red Chilli Powder
- 1 Finely Chopped Onions
- coriander leaves, finely chopped
- Lemon Juice { Optional }
Instructions
To prepare Sev Puri
- Arrange 5-6 Papdi in a plate, layer it chunks of boiled potatoes .
- Sprinkle some Chaat Masala & Cumin Powder
- Drizzle green chutney and red chutney on the top and add Sev on the top.
- Sprinkle chaat masala, cumin powder & red chilli powder.
- Top it with onions and coriander leaves and serve the Sev Puri immediately. You can squeeze some lemon juice on the top if you like. Its optional.

Thank u sandhya for ur quick comment!! For the seekh kabab, chana powder used here is also called as bhuna chana or bengal gram roasted..You have to simply powder the daal straight from the packet..
