This easy Vegan Mug Brownie is made right in the microwave and ready in just 2 minutes! No eggs, no dairy, no fuss. Just grab your ingredients, and I’ll show you how to make a delicious vegan brownie in a mug.

Mug brownies are my go-to for instant dessert cravings! With just a few pantry staples, a mug, and a microwave, I make a vegan chocolate brownie in under 5 minutes—no need to make an entire batch of Instant Pot Brownies. I love serving mine warm with vanilla whipped cream or Ninja Creami Chocolate Ice Cream—such a treat!

I've been temporary vegan for the last 3 months due to food intolerances and this mug dessert has been on repeat in my household.

I often make this simple Vegan Mug Brownie as an after-school treat. If not this, I’ll make a Nutella mug cake in microwave or chocolate chip cookie in a mug—fun, quick, and delicious treat in minutes.

No microwave? No problem! You can also make mug desserts in the air fryer. My favorites are the Air Fryer Chocolate Mug Cake and Air Fryer Strawberry Mug Cake.

  • Plain flour: also known as all purpose flour. 
  • Sugar: I've used granulated sugar. Caster sugar or brown sugar also works.
  • Cocoa Powder: Good Quality unsweetened cocoa powder makes a difference in flavours.
  • Milk: I use plant-based milk like oat milk that's in my fridge. Use any dairy free milk.
  • Oil: I've used Sunflower oil. Substitute with Vegetable oil, Coconut Oil or vegan butter.
  • Vanilla Extract optional
  • Chocolate chips - Add them if you like it chocolatey.

How to Make a Vegan Mug Brownie in the Microwave (Step-by-Step)?

Step 1: In the microwave-safe mug or a large ramekin, add the wet ingredients - milk, oil, vanilla extract, and mix well.

Step 2: Add the flour, cocoa, and sugar. Use a fork to combine.

Step 3: Add the chocolate chips and combine.

Step 4: Place in the microwave and cook for 2 minutes. I usually start at 60 seconds and add 2 more incremental of 30 seconds each.
Let this instant microwave brownie to cool down for 3 to 4 minutes before serving.

Serving

I love enjoying this vegan mug brownie just as it is—warm and fudgy! But when I want to serve it extra special, I top it with a scoop of ice cream or whipped cream, a drizzle of homemade salted caramel sauce, Air fryer Dehydrated Strawberries or a sprinkle of chopped nuts.

Storing Leftover Microwave Brownies

As mug brownies are single-serve desserts, we rarely have leftovers. But when I have, I simply cover the mug with plastic wrap and store it at room temperature for up to 24 hours. For the best texture and flavor, enjoy it fresh and warm.

Top Tips

  • I use a 900W microwave and cook the brownie for 2 minutes. If your microwave is more powerful (e.g. 1200W), start with 1 minute and check. You may only need a little more time.
  • Place a small plate or paper towel under the microwave-safe mug to catch any potential spillover.
  • Check the brownie for doneness—look for a springy top and no wet spots. A skewer or toothpick should come out mostly clean.
  • I use 2 tablespoons of sugar when serving with whipped cream. If you're enjoying it on its own, 4 tablespoons makes it perfectly sweet.
  • I've made this brownie with water too, but love the texture with oat milk.

What Size Mug Should I Use to Make Microwave Mug Brownie?

Use a microwave-safe mug with a capacity of 295ml (10 oz) or larger. Make sure there's enough room for the brownie to rise—I fill the mug max upto three-quarters full to avoid overflow. For mug recipes, I like using a sturdy ceramic microwave-safe mug like my Denby Pottery mug.

Can Any Mug Be Used in the Microwave?

Most ceramic or heat-resistant mugs are suitable for use in the microwave. Look for an "oven-safe" or "microwave-safe" label on the mug. Avoid using plastic or thin glass mugs. I have used Denby Kiln blue small ridged mugs for this recipe with a capacity of 295ml.

Can You Really Make Brownies in the Microwave?

Absolutely! You can definitely make brownies in the microwave—and they’re super delicious. The texture is a little different from traditional oven-baked or air fryer brownies, microwave brownies are a fantastic option when you're short on time.

How Do You Make Sure Microwave Brownies Are Moist?

To keep microwave brownies moist,
1.I use oil or vegan butter in the recipe—this adds richness and helps retain moisture.
2. I also use plant-based milk instead of water, as it provides more fat and flavor, making the brownies fudgy and delicious.
3.Be careful not to overcook them; watch closely and stop microwaving as soon as the brownies are set in the middle.

Do I Need to Change Any Settings to Make Eggless Brownies in the Microwave?

No special microwave settings are needed to make eggless or vegan brownies. Just follow the recipe and cook for the recommended time. Since microwaves vary in wattage, you may need to adjust the cooking time slightly—lower wattage microwaves require longer cooking, while higher wattage ones need less. Keep an eye on the brownie to avoid overcooking and ensure even baking.

Ingredients

  • 3 tablespoon Plain Flour
  • 2-4 tablespoon Sugar ⅛-¼ Cup
  • 3 tablespoon Sunflower Oil or any of your favorites
  • 3 tablespoon Dairy-free milk or Water I use Oat milk
  • 2 tablespoon Cocoa Powder
  • ¼ teaspoon Vanilla Extract
  • 1 Pinch Salt

Instructions

  • Add Dry Ingredients to the mug and gently stir.
  • Add Wet Ingredients one by one, stirring in between. Make sure there are no lumps. Add
  • Microwave Place the mug in the microwave and Cook HIGH for 60sec. Add another 30 seconds each twice. Check with a skewer to see if its cooked well in.
    (Here, I’ve used a 900W microwave; if yours is different, the timing may vary. For example, if your microwave is 1200W, the brownie may cook in just about 1 minute or slightly more.)
  • Allow the Brownie to cool down for 3-4 minutes.
    Serve warm vegan brownies with scoop of vanilla ice cream or whipping cream.

    Just tried this vegan mug brownie and it totally hit the spot! I love how quick and easy it was—perfect for when those late-night chocolate cravings strike.
