TIPS TO REMEMBER WHILE MELTING WHITE CHOCOLATE
White Chocolate can Seize and become lumpy quickly.. So there are a few important tips to keep in mind.
Chop the white chocolates into small uniform sizes and place it in a bowl that sits snuggly on top of a saucepan filled with minimal water. The bowl should not come in contact with water in the saucepan as this can cause overheating and cause the chocolates to seize. Allow the water to boil in low-simmer.
Stir often with a silicone spatula to ensure they are melting well.
You can melt the white chocolate in microwave too.But remember to melt in half the power and be watchful.
ERRORS THAT CAN HAPPEN WITH WHITE CHOCOLATE
I had a huge lump of chocolate seizure as there was some contact of water with the ladle used for stirring the chocolate.
Another instance of burning happened as the power of the microwave was too high.

- 200 g White Chocolate
- 20 Red Candy Melts
- 20 Blue Candy Melts
- Patriotic Sprinkles in Red Blue and White
- Tooth Pick or Chopstick
Instructions
- Line a pan with a wax paper. I've used a circular pan for making the Chocolate Bark.
- Heat 3-4 cm of water in a medium sized saucepan and bring the water to gentle simmer { barely minimum simmer }. Place a snuggly deep bowl on top of the saucepan. The bowl should not come in contact with water in the saucepan as this can cause overheating and cause the chocolates to seize. Add the chocolates to the deep bowl, stir with a spatula until smooth. Turn off the gas.
- Pour the melted white chocolate on the prepared pan and smooth the top.
- Melt the red candy melt and blue candy melt separately in the microwave. Melt the candy melt in increments of 20 seconds stirring in between. At approximately 1 minute - 1 minute 20 seconds, the candy melts will be smooth.
- Add blobs of red candy melt and blue candy melt on top of the white chocolate.
- Using a chop stick, stir through the candy melts to create swirls.
- Add the sprinkles in random and place the prepared pan in the freezer for 20 minutes.
- Remove from the freezer, break them randomly and enjoy these 4th of July Chocolate Bark.
