About these Homemade dehydrated strawberries
When strawberries are in season, we buy them in plenty and use them in many recipes right from breakfast to desserts. We also love to freeze the strawberries for later and use them in the winter.
These dried strawberries taste best, when made with fresh, ripe, in-season strawberries. it is super simple to make, however not very quick. The dehydrated strawberries will be pliable and not too chewy/crunchy. They easily bend without breaking – leather-like texture.
Before you actually start dehydrating, check to see if your air fryer can air fry at 135F / 57C. If it can’t do at that temperature, then your air fryer is not suitable for dehydrating fruits and vegetables.
I find making them in the air fryer gives me a better texture compared to oven-dried strawberries.

How to dehydrate strawberries in the air fryer step by step?
Prep the strawberries – Wash, dry, and hull the fruit with a strawberry huller. Slice the strawberries thin.
Air fry – Arrange the sliced strawberries in the air fryer basket. Air fry at the lowest possible setting for up to 3 hours My Instant Pot Vortex has a dehydrate feature that sets the temperature to 135F / 57C. Check in between to see, if they are dried and do not have wet spots.
Store – Once you have removed them from the air fryer basket, allow them to air dry to cool. Then transfer to a glass mason jar and enjoy.




How to make Oven Dried Strawberries?
Prep – Prep the strawberries like above.
Arrange – Line a baking sheet with parchment paper. Arrange the strawberry slices without touching each other.
Bake – Bake at 200 F / 90 C for about 2 hours until the top of the strawberries is dry. Peel the strawberry slices and flip them over. Bake for another 30 minutes – 1 hour until completely dehydrated.


Store – Allow the dehydrated strawberries to cool down completely. Transfer to an air-tight container and enjoy all year long.

Oven Dried Strawberries Vs Air fryer dehydrated strawberries
Dried Strawberries can be made in the oven as well as in the air fryer. However, there is a difference in the texture of the berries.
You can make large portions in the oven than in the air fryer.
Oven-baked strawberries are crispy like chips. Air-fried strawberries are pliable and have a leather-like texture.
Storage Suggestion
Store the Dehydrated strawberries in a glass mason jar. They keep well for at least a year if stored properly.

I have tried and tested dehydrating strawberries at different temperatures and times. And we found cooking between 2.5 hours – 3 hours in the air fryer produces the best results in my Instant Pot Vortex 6 in 1 air fryer. The time will also depend upon how thin or thick you have sliced the strawberries.

Ingredients
- 450 g strawberries 1 lb
Instructions
- Slice the Strawberries into 1/8th inch thickness. Pat dry and arrange them in the air fryer basket (without touching each other).
- Air fry at 137F / 58°C for 3 hours. .Check in between at every hour for doneness.
- The strawberries will be dehydrated between 2.5 hours – 3 hours depending upon the thickness of the sliced strawberries.
- Repeat the process if you cannot fit all the strawberries in the basket.
- Allow it to cool completely. Store the dried strawberries in mason jars.
