- Mushrooms – I use chestnut mushrooms, white button mushrooms. Cremini mushrooms also work.
- Oil – I usually use olive oil or sunflower oil. But any vegetable oil works.
- Soy sauce or tamari – I prefer low sodium soy sauce or tamari (for gluten-free)
- Garlic – Either garlic powder or fresh minced garlic. This is optional
- Salt & Pepper to taste.
🔪How to Make Roasted Mushrooms in Air Fryer ?

Step 1. Cut the mushrooms into thick slices. I usually half each of the mushrooms. But if they are too big I quarter them and add them to a bowl.

Step 2. Toss the mushrooms with rest of the ingredients like soy, oil and garlic in a medium bowl.

Step 3. Place them in the air fryer basket.(no need to preheat!)

Step 4. Cook at 380°F (190°C) for 7 minutes if your air fryer is large, or 10-12 minutes if it’s smaller.
Remove the air fried mushrooms from the air fryer basket. Drizzle with lemon juice, and garnish with parsley or thyme before serving.
🍽️Serving Suggestions
- Sprinkle fresh herbs and a squeeze of lemon juice over the air fryer garlic soy mushrooms and enjoy them as a simple side dish with any main meal.
- Serve alongside roast sweet potatoes and air fried crispy chickpeas or as part of a Sweet Potato Buddha bowl.
- Add them to vegetable fried rice or hibachi fried rice as a flavorful topping.

🧂Storing Leftovers
Once the mushrooms are cooked in air fryer, let them cool completely. Then transfer them to an airtight container and keep them in the fridge for up to 3 days. To reheat, warm them gently in a pan on the stove or pop them back in the air fryer at 350°F (175°C) for a few minutes until heated through.
Note: I don’t recommend freezing roasted mushrooms as they can get soggy and lose their texture. It’s best to enjoy them fresh or within a few days refrigerated.

⏲️Cooking Times for Air Frying Mushrooms in Different Air Fryers
I particularly love air frying in my Instant Pot Vortex 6 in 1 air fryer, because it is so much quicker than oven baking! One thing to keep in mind is that time taken to cook in my 6qt air fryer is only 7-8 minutes, whereas it can take about 12-15 minutes in a 3- 4qt air fryer.
So always use the time mentioned in the recipe as a guideline and start with a lesser time.
