Air fryer Roasted Mushrooms

Super simple and easy air fryer roasted mushrooms! Thanks to the air fryer, you can quickly make a flavorful mushroom side dish with just 6 ingredients in under 15 minutes.

As a mum, I find the air fryer super handy for making quick veggie sides on busy weeknights. Whether it’s roast cauliflower in air fryer, air fried green beans, or these air fryer garlic mushrooms (my daughter’s favorite—she loves them over vegetable fried rice and mushroom fried rice), it’s an easy way to get something tasty on the table fast.

I usually keep a stock of chestnut or white button mushrooms because they’re so versatile — perfect for quick sides like mushroom bhaji, or simple one-pot Indian mushroom rice.

💭Sandhya’s Top Tips to Roasted Mushrooms Recipe

  • Use whatever oil you have on hand—I usually go for olive oil or sunflower oil.
  • A little seasoning goes a long way—add it gradually and adjust to your taste.
  • Slice the mushrooms into similar sizes for even cooking: cut large mushrooms into quarters and smaller ones in halves.
  • If you’re using tamari or soy sauce, be careful with adding extra salt since these sauces already contain salt.
  • Don’t overcrowd the air fryer basket. Mushrooms need space to roast properly; otherwise, they’ll steam instead of getting crispy.

  • Mushrooms – I use chestnut mushrooms, white button mushrooms. Cremini mushrooms also work.
  • Oil – I usually use olive oil or sunflower oil. But any vegetable oil works.
  • Soy sauce or tamari – I prefer low sodium soy sauce or tamari (for gluten-free) 
  • Garlic – Either garlic powder or fresh minced garlic. This is optional
  • Salt & Pepper to taste.

🔪How to Make Roasted Mushrooms in Air Fryer ?

Step 1. Cut the mushrooms into thick slices. I usually half each of the mushrooms. But if they are too big I quarter them and add them to a bowl.

Step 2. Toss the mushrooms with rest of the ingredients like soy, oil and garlic in a medium bowl.

Step 3. Place them in the air fryer basket.(no need to preheat!)

Step 4. Cook at 380°F (190°C) for 7 minutes if your air fryer is large, or 10-12 minutes if it’s smaller.

Remove the air fried mushrooms from the air fryer basket. Drizzle with lemon juice, and garnish with parsley or thyme before serving.

🍽️Serving Suggestions

  • Sprinkle fresh herbs and a squeeze of lemon juice over the air fryer garlic soy mushrooms and enjoy them as a simple side dish with any main meal.
  • Serve alongside roast sweet potatoes and air fried crispy chickpeas or as part of a Sweet Potato Buddha bowl.
  • Add them to vegetable fried rice or hibachi fried rice as a flavorful topping.
  • For an English breakfast (Skip the soy sauce) spread, pair with:
    • roasted tomatoes cooked in air fryer,
    • air fryer hard boiled egg,
    • vegetarian air fryer sausages
    • air fryer hashbrowns.
  • For a quick breakfast or snack, pile the mushrooms on toasted bread with smashed avocado — simple and delicious!

🧂Storing Leftovers

Once the mushrooms are cooked in air fryer, let them cool completely. Then transfer them to an airtight container and keep them in the fridge for up to 3 days. To reheat, warm them gently in a pan on the stove or pop them back in the air fryer at 350°F (175°C) for a few minutes until heated through.

Note: I don’t recommend freezing roasted mushrooms as they can get soggy and lose their texture. It’s best to enjoy them fresh or within a few days refrigerated.

⏲️Cooking Times for Air Frying Mushrooms in Different Air Fryers

I particularly love air frying in my Instant Pot Vortex 6 in 1 air fryer, because it is so much quicker than oven baking! One thing to keep in mind is that time taken to cook in my 6qt air fryer is only 7-8 minutes, whereas it can take about 12-15 minutes in a 3- 4qt air fryer.

So always use the time mentioned in the recipe as a guideline and start with a lesser time.

These tasty and simple air fryer roasted mushrooms make a perfect side dish. They’re quick to prepare and use just a handful of basic ingredients. You’ll love how easy they are and how much flavor they pack!

Ingredients

  • 300 g mushrooms halved (about 9oz) I use chestnut mushrooms
  • 2 teaspoon low sodium soy sauce tamari sauce
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • salt & pepper to taste I use ½ a teaspoon each

Instructions

  • Cut the mushrooms into thick slices. I usually half each of the mushrooms. But if they are too big I quarter them.
  • In a bowl, add the mushrooms and seasoning.Toss together.
  • Place them in the air fryer basket.(no need to preheat!) 
  • Air fry at 380°F (190°C) for 7 minutes if your air fryer is large, or 10-12 minutes if it’s smaller.
  • Remove from the air fryer basket, drizzle lemon juice, season with extra sea salt, and garnish with herbs.

Notes

I use a 6 qt air fryers for making air fried mushrooms. If using a smaller air fryer like 3- 4qt, the recipe may take a little longer to cook, so adjust the cooking time. 

Expert Tips

    These are fantastic. Of course I am a mushroom lover. I have fresh rosemary and thyme in my garden so I used that and they were perfect.
