I often use them to make roasted tomato and pepper pasta sauce or even Jain Makhani sauce (when I roast without garlic). They are delicious in roasted tomato and beetroot soup, and roasted tomato pasta sauce. But honestly, they’re just as good on their own—juicy, flavorful, and ready in minutes. Serve them as a side dish, add to soups or salads, or toss into pasta.

- Fresh tomatoes – I’ve used vine tomatoes here, but you can use Roma, cherry, plum, grape, green, or even beefsteak tomatoes—whatever’s in season or in your fridge. When in plenty, I also make air fryer sun dried tomatoes with vine tomatoes or oven dried tomatoes.
- Extra virgin olive oil – I love the rich flavor it adds, but any oil works. Sometimes I use garlic oil or garlic chili oil for extra punch, and if I do, I skip adding fresh garlic.
- Sea salt – I like using sea salt or kosher salt for the best seasoning.
- Garlic – Freshly minced garlic makes these tomatoes taste incredible.
- Seasoning – Italian seasoning is my go-to, but I’ll swap it for taco seasoning or dried herbs like basil, oregano, or thyme if that’s what I have handy.
Variations
- Cheese: Add a sprinkle of cheddar, Red Leicester, mozzarella, or any cheese you like.
- Crispiness: Add panko bread crumbs.
💭 Sandhya' Tips for Perfectly Roasted Tomatoes in Air Fryer
- Air fryer models vary, so check your tomatoes a few minutes. They’re ready when they look wilted and slightly shriveled. (I use Instant Vortex Plus 6 in 1 air fryer - they cook really fast!)
- Always arrange tomato halves in a single layer without overlapping like I do for air fryer dried tomatoes too. This helps them roast evenly in the air fryer.
- Cooking time depends on the size of your tomatoes and how roasted you like them. Keep an eye on them and adjust as needed.
- Use fresh, ripe tomatoes for the best flavor. Juicier tomatoes roast up more tender and delicious.
- Don’t be shy with the seasoning—salt, herbs, and garlic bring out the natural sweetness perfectly.
- For easy cleanup, line the air fryer basket with parchment paper before roasting.
🔪How to Make Juicy Air Fryer Roasted Tomatoes

Step 1. Half the tomatoes lengthwise instead of widthwise. Then, further cut the edges of the tomatoes by cutting a triangle.

Step 2. Season with salt, Italian seasoning, and brush with garlic oil.

Step 3. Transfer the tomatoes cut side up in the air fryer basket.

Step 4. Air fry at 180°C (356°F) for 8-12 minutes, depending on the size of the tomatoes.
👩🏻🍳Pro Tip: When I roast cherry tomatoes in air fryer, I would do about 5-6 minutes. For Vine tomatoes, I like it at 12 minutes.
🔪How to Roast Tomato Slices in Air Fryer?
- Slice the Tomatoes: Cut the tomatoes into 1-1 ½ inch thick slices. Add seasoning and drizzle with oil.
- Air Fry: Transfer to the air fryer basket and air fry at 180°C (356°F) for 5-6 minutes.

Simply enjoy them as a flavorful, easy side with any meal. I love to add fresh basil (and a drizzle of basil infused olive oil) and enjoy roasted tomatoes in air fryer as part of my English breakfast spread with:

To get that smoky, fire-roasted flavor, I roast the tomatoes at a high temperature (around 200°C) for 10-12 minutes until the skins char a bit. You can also add a pinch of smoked paprika or a quick sear under the broiler if you want to boost that smokiness.
I find the air fryer quicker and easier — it gets the tomatoes nicely roasted without heating up the whole kitchen. But the oven works well if you’re making a big batch to feed a crowd.
