Vegan Aloo Gobi { Spiced Potato & Cauliflower } is a classic Indian takeaway curry recipe, made with a handful of ingredients. It is a brilliant side dish for your flatbreads! INDIAN- STYLE VEGAN CAULIFLOWER & POTATO CURRY RECIPE

I thought it is really not fair if I do not share simple and delicious homestyle Indian curries that we regularly make at home. This humble & hearty Cauliflower with potatoes features on our dining table literally every week and I serve them with Phulka’s/Roti or Garlic Naan along with Cucumber Raita.

This Aloo Gobi curry recipe is quick and simple to make, that I had almost forgotten to draft a recipe, amidst so many luscious rich Vegetarian Indian curries.

WHAT IS ALOO GOBI?

Aloo { Potato }  & Gobi { Cauliflower } is a popular Indian curry that traditionally hails from Punjab. However, it’s quite well known all around the world, where-ever India food has found its feat!

Its so popular in UK that I really cannot imagine a menu card from the Indian restaurant or takeaway without the Aloo Gobi, Mushroom Bhaji and Onion Bhaji.

This curry called by so many names – Aloo Gobhi, Alu Gobi, Dry Aloo Gobi Curry, Aloo Gobi Sabzi, Dry Aloo Gobi, Gobi Aloo, Aloo Gobi Masala, Spiced Potato with Cauliflower, Cauliflower with Potatoes…

Aloo Gobi - Cauliflower with Potatoes

INGREDIENTS FOR ALOO GOBI { Indian STYLE VEGAN Cauliflower & Potato Curry }

You will need the following ingredients –

 Potato &  Cauliflower are the backbone of this vegan curry. Though this simple Indian curry is a dry side dish, we add some chopped tomatoes to add in the moisture for cooking the vegetables.

Onion – It adds immense flavour and forms the base of the curry.

Ginger & Garlic –  I like to add ginger to my curries that require potatoes as its great for digestion.  I tend to add / omit garlic depending on the occasion.

Spices – As I always say, adding spices in the right proportion is important to making a great Indian Curry. I cannot imagine my Gobi Masala curry without Turmeric, Cumin Powder, Chilli Powder & Garam Masala.

Optional – Sometimes I like to use 2 teaspoons of Panch Phoran Spices for seasoning.  Panch Phoran mean a blend of 5 spices – fenugreek, nigella, cumin, black mustard and fennel seeds. These spices are always used as whole spices and never ground.

I like to finish off my dry side dish with some lemon juice and a handful of coriander to jazz up.

All the ingredients are easily available in all the super grocer stores.

TIPS TO MAKE THE BEST ALOO GOBI

Pan toasting the Potatoes and Cauliflower brings out the best flavours out of the Aloo Gobhi masala. Alternatively you may even roast it in the oven for a few minutes.

If you are blanching the cauliflower for a few minutes, remember they would have cooked more than 50% by then. Handle them gently.

Do not cook the Cauliflower for too long covered, it will turn out mushy!

Add the cauliflower, right at the end and this will give you some perfect textured curry.

Aloo Gobi masala requires only minimal spices to bring out the best!

ALOO PHOOL GOBI RECIPE VARIATIONS

This healthy recipe of cauliflower & potato has got many interpretations across households in India.

No Onion – No Garlic Aloo Gobi curry  also tastes wonderful. My mom always made these for my dad’s lunch box this way.

Aloo Gobi Matar – Add some peas to this curry and you have a new recipe !

Aloo Gobi Saag – Add some Spinach to this recipe

HOW TO COOK THE EASY VEGAN ALOO GOBI CURRY

It is really easy to make my perfect Alu Gobi as a side dish!

✔PREPARE POTATO & CAULIFLOWER – Wash, peel, cut the potatoes into medium-sized chunks, and saute them for 5-7 minutes in a pan until they get slightly pan roasted & you spot the roast marks on them.

Separate the cauliflower florets and pan toast them for just about 3-4 minutes until they gently roast too.

Now comes the best bit!!

✔ADD SEASONING / TARKA – Heat oil in a deep pan, add cumin seeds and allow it to splutter.  Add the chopped onions, ginger & garlic and saute until translucent.

✔ONION & TOMATO – It’s time to add the diced tomatoes & spices.Continue to cook until the onion &  tomato melt to make a thick masala paste.

✔POTATOES – Add the potatoes and stir to coat with the masala. Reduce the heat, Cover the pan with the lid and cook for 5 minutes, stirring every now and then.

✔CAULIFLOWER – Add the pan toasted cauliflower, garam masala & salt and mix well. Cover and cook for additional 10-14 minutes in low flame, checking in between every 2 minutes, that cauliflower is tender and not mushy.

If the masala is catching at the bottom of the pan, add a splash of water just enough to cook the vegetables. Tomato lends the moisture to the cauliflower & potatoes in this curry.

✔ GARNISH- Finally, add a generous portion of finely chopped coriander leaves, a squeeze of lemon juice and stir to mix.  Serve this healthy cauliflower with potatoes ( gobi aloo ) along with roti’s or paratha’s & some pickle !

SERVING SUGGESTIONS

With Flatbreads – This Easy Peasy versatile Aloo Gobi is delicious with Naan bread or 3 Ingredients flatbread for a combo meal.

For Lunchbox / Buddha Bowls -It is also great for your lunch boxes or even for buddha bowls.

Wraps – You can stuff the aloo gobi with salad in wraps, drizzle the Indian Mint sauce, Tamarind Chutney and enjoy.

Ingredients

  • 3 large potatoes peeled & cut into chunks
  • 1 small cauliflower cut into florets
  • 1 medium sized onion diced
  • 2 large tomatoes diced
  • 5 tsp Oil
  • 1 tsp cumin seeds
  • 1 tbsp ginger
  • 1 tsp garlic
  • 3/4 tsp turmeric
  • 1/2 tsp cumin powder
  • 1/2 – 1 tsp Chilli Powder
  • 1/2 tsp Garam Masala
  • salt to taste
  • lemon juice  Good squeeze
  • 4 tbsp coriander leaves
  • green chillies optional

Instructions

  • Wash, peel, cut the potatoes into medium sized chunks and saute them for 5-7 minutes in a pan, until they get slightly pan roasted & you spot the roast marks on them.

  • Heat oil in a deep pan, add cumin seeds and allow it to splutter. If you decide to use Panch Phoran instead of cumin seeds, you may add it to the hot oil and allow the spices to splutter. Fenugreek / Nigel seeds can get bitter if left too long, so you really need to be quick.
  • Add the chopped onions, ginger & garlic and saute until translucent.
  • Add the diced tomatoes and spices – turmeric, chilli powder, coriander powder and cumin powder Continue to cook until the onion & tomato melt to make a thick masala paste.
  • Add the potatoes and stir to coat with the masala. Reduce the heat and cover the pan with the lid and cook for 3 minutes, stirring every now and then.
  • Add the pan toasted cauliflower, garam masala & salt and mix well. Cover and cook for additional 10-14 minutes in low flame, checking in between every 2 minutes, that cauliflower is tender and not mushy.

Notes

 If you like it spicer, add green chillies to the pan along with onions. I have not added to the recipe while cooking. Panch Phoran lends a gorgeous flavor the curry. However you may choose to use just cumin seeds too.
