Blueberry Coconut Smoothie –

Made with 4 Ingredient, this insanely easy Blueberry Coconut Milk Smoothie takes  only 5 Minutes to make.  All that you need is a Blender and an appetite for Breakfast!  { VEGAN, GLUTEN, DAIRY FREE }

It is ideal breakfast drink for someone with lactose intolerance!

BLUEBERRY COCONUT MILK SMOOTHIE RECIPE

Off late, when I am looking for a nutritiously healthy breakfast, I instantly turn to smoothies for a quick and easy option.

One of my favourite breakfast drink is this Blueberry Smoothie recipe. What I love about blueberry smoothie milk is that it is absolutely quick and easy and can be whizzed up in just 5 mins.

For Low carb blueberry smoothie, simply omit the sweetener from the recipe.

Are Blueberry Smoothie good for you?

Smoothies are extremely good for you and a great way to start your day. A typical blueberry smoothie is made with blueberries ( fresh or frozen ), greek yogurt, milk and ice. Low in Calories and High in Calcium!

You can make the healthy blueberry drink all the more healthier, by adding some of the super foods like chia seeds, cacao, flax seeds, protein powder etc.

Since the beginning of this year, we have been on a Smoothie Drive, Detoxing often, enjoying this sweet potato buddha bowl and enjoying small portions of healthy snacks regularly. This new initiative does push me to experiment and invent onto new meals & drinks that have been undiscovered at my end. We have always enjoyed Mango Lassi !!

VARIATIONS TO SOME AMAZING BLUEBERRY SMOOTHIE

I do make at least a few varieties of this easy breakfast smoothie, like the

Blueberry Smoothie Banana – Add blueberries, banana, apple juice and some greek yogurt to a blender and whizz until smooth.

Blueberry Smoothie Spinach – Blueberry Smoothie with Spinach can be prepared by adding some spinach, strawberries, greek yogurt, blueberries & sweetener to a blender and whizz smooth.

Almond Milk Blueberry Smoothie – For Vegan Smoothie Lovers, Almond milk  is a great alternative to greek yogurt & milk.

Ingredients You’ll need?

To make BLUEBERRY SMOOTHIE, you will need the following ingredients

Blueberries – Frozen or Fresh – both works really well. If you are using Frozen Blueberries, you may leave out ice from the recipe.

Coconut Milk – Coconut milk adds creaminess to the smoothie.

Maple Syrup – Alternate sweetener could be honey. But in that case, this blueberry smoothie will not be vegan. Simply leave out maple syrup for the low carb drink.

Water  & Ice – Optional

Vanilla Extract  adds a great touch to the drink. But it is optional too.

HOW DO YOU MAKE QUICK & EASY BLUEBERRY SMOOTHIE?

Well, simply place fresh blueberries, coconut milk, maple syrup, ice cubes in a high speed blender and blitz until really smooth.

This creamy blueberry smoothie is made with blueberries, coconut milk and maple syrup, blended together into a delicious drink. Perfect breakfast drink for a start to the day!

Equipment

  • Blender

Ingredients

  • 2 Cup Blueberries Fresh or Frozen
  • 1½ Cup  Coconut Milk
  • 2 Tbsp Maple Syrup / Honey
  • 1/4 Cup Ice cubes or as needed
  • Water as needed optional
  • 1 Tsp Vanilla Extract optional

Instructions

  • Add the ingredients to a blender jar and blend together until smooth.
  • If the consistency is thick, add some water and blitz again. Serve this blueberry smoothie right away or make them ahead at night and you could grab them as a breakfast drink in the morning.

Notes

For making smoothie with frozen Blueberries, a high speed blender is recommended.
For Low Carb Blueberry Smoothie - Omit the sweetener from the recipe!
