To a traditional Smoothie, Introduce Coconut Milk and give it a Vegan Twist. This recipe of Blueberry Coconut Milk Smoothie is kids friendly and can be whizzed up in 5 mins.
Since the beginning of this year, we have been on a Smoothie Drive, Detoxing often, enjoying a low carb meal and enjoying small portions of healthy snacks regularly.This new initiative does push me to experiment and invent onto new meals & drinks that have been undiscovered at my end. We always enjoyed Mango Lassi !! In a way, it is Mango Smoothie, topped with sugary sweeteners. But now, if I were to make Mango Smoothie, aka Mango Lassi I would sweeten with Honey in small portion & add a hint of vanilla for the sweet aroma and not sugar.
For a detox drink, I would include Green Tea concoction along with Berry Mix, a tsp of Flax Seeds and blitz. Sweeten if needed and add a hint of Lemon for that zesty flavour.
We generally have a mental block, feeling and enjoying the comfort as usual. Stepping out of the comfort zone, moving on with habits is hard, but not impossible !! Here’s my new take on a smoothie for coconut lovers like us. Folks at Aldi Superstores sent me vouchers to pick ingredients for the Vegan Smoothie.. Oh what fun it was handpicking them and also browsing through the weekly specials.
This easy vegan blueberry coconut smoothie can be made is 5 minutes. All thats is needed is a blender and the ingredients.
- 2 Cups Blueberries
- 11/2 Cup Coconut Milk
- 2 Tbsp Honey
- 1/4 Cup Ice cubes or as needed
- Water as needed optional
- 1 Tsp Vanilla Extract optional
In a blender pitcher, combine the ingredients and blend together until smooth.If the consistency is thick, add some water and blitz again. Serve it right away or make them ahead at night and you could grab them as a breakfast drink in the morning.
