At home, we all love to munch on a light snack to accompany Masala Chai regularly. It can be Airfryer Samosa’s , Airfryer Beetroot Chips or even this crunchy Cornflakes chivda mixture. In-fact, for most Indian festivals, we would prepare at-least one savoury dish along with a sweet dish to complete the celebration.. So, how about making this easy Cornflakes Mixture?

WHAT IS CORNFLAKES MIXTURE?
Cornflakes mixture is an easy Indian sweet & savory snack made by deep frying ingredients – raw cornflakes { also known as poha or makai in hindi } , peanuts, raisins, curry leaves, cashewnuts, lentil and tossed with essential Indian spices & sugar.
The list of ingredients may look slightly exhaustive { about 10 } but let it not put you off.. It only takes 15 minutes of preparation/cooking and 5 minutes of mixing them. I believe this Indian Snack is incredibly simple and it can be made in a jiffy.
This delightful Indian munch on snack is known by many names – Cornflakes Mixture , Cornflakes chivda mixture, Cornflakes Namkeen, Makai Chivda or even Cornflakes poha mixture.
Cornflakes used in this recipe is quite different from the breakfast cereal Cornflakes. Do not get confused with this. Cornflakes is also known as Makai flakes or Poha and they are easily available in Indian grocery stores. These makai flakes can be deep fried and they turn into a crunchy & crispy flakes.
CAN I USE KELLOGGS CEREAL CORNFLAKES TO MAKE THIS MIXTURE ?
If you would like to make it with ready-to-eat Cornflakes, remember to just pan roast the cornflakes with little oil and then mix it with the rest of the ingredients. Taste and flavours will be a bit different, but they will make a healthy munch on snack.

CORNFLAKES MIXTURE { CORNFLAKES CHIVDA } RECIPE BELOW
Ingredients
- 2 Cups Raw Cornflakes { Makai Poha Avil Poha }
- 1/4 Cup Cashew-nuts
- 1/2 Cup Peanuts
- 10-12 Curry Leaves
- 1 Tsp Turmeric Powder
- 1/2 - 1 Tsp Chilli Powder
- 1 Tbsp Roasted Gram Dal { Pottukadalai }
- 1 Tsp Powdered Sugar
- Salt to Taste
- Oil for frying
Instructions
- Heat oil in a deep bottom pan until hot enough { say moderately hot }. Deep fry corn flakes until they puff, expand and become crunchy and crispy. Drain them onto kitchen towel
- Deep fry roasted gram dal peanuts, cashew nuts, and raisins { optional }, curry leaves and set them aside.
- When the mixture is still warm, add the turmeric powder, chilli powder, salt and sugar and gently mix them together.
- Allow the Cornflakes mixture to cool down and store them in an air tight container.

HOW TO MAKE CORNFLAKES MIXTURE – STEP BY STEP METHOD
To begin with, gather all the ingredients to make the mixture in a tray.
Heat Oil in a Deep bottom pan until hot enough. Test by adding one corn flakes to see if they puff up and become golden and crispy.
Now add 1/4 of flakes and deep fry them, until they expand, puff up and become golden and crispy. Remember, not to fry them for too long as they can turn brown. Drain the fried corn flakes to a kitchen paper. Repeat the process until all the flakes are fried.
Now add roasted gram dal and fry until brown. Drain them onto a kitchen towel and set is aside.
Now, add the peanuts and fry them until crispy and crunchy. Drain them with a fine sieve onto a kitchen paper.
Fry Curry leaves until just crispy enough. Drain them to kitchen towel too.
Reduce the flame and fry the cashew-nuts until they just begin to turn brown. Set them aside.
When the Mixture is still warm, add Turmeric Powder, Chilli Powder, Salt and Sugar. Stir and shake the mixture to combine.
Store them in airtight containers and enjoy them as and when you would like.
