Need a speedy midweek meal? Try my comforting and creamy Vegetarian Tortellini Soup made with store-bought tortellini pasta and veggies. It takes about 30 minutes to make our favorite vegetable soup in an Instant Pot or stovetop.

About this Vegetarian Tortellini Soup in Instant Pot

My midweek meals are all about quick and easy recipes. Just like this best vegetarian sausage tortellini soup, Instant Pot Mexican Quinoa, or Palak Paneer, this dish requires minimal prep and is mostly hands-off. I love using my Instant Pot to whip up this quick weeknight tortellini soup with spinach in under 30 minutes.

If you don’t own a pressure cooker, you can easily make it in a Dutch oven on the stovetop with a bit of supervision. Hearty Comfort food in a bowl ready, almost effortlessly.

Accidental Tortellini soup success

This healthy tortellini soup with vegetables was a happy accident! I initially made it with fire-roasted tomatoes, mushrooms, Italian seasoning, and chili flakes. Realizing my kids might find it too spicy, I added cream to make it creamy and stirred in spinach for extra nutrition. Topped with cheese, it became an instant family favorite!

Now, I use fresh or frozen tortellini to make this vegetarian tortellini soup regularly.

What is Tortellini Soup?

Tortellini soup is a creamy pasta soup made with stuffed cheese tortellini, tomatoes, vegetables, and herbs. I love using ricotta and cheese tortellini or three-cheese tortellini. For a vegan option, use vegan cheese tortellini.

You can try dishes like Mediterranean tortellini salad, an easy pasta bake with tortellini, or tomato and vegetarian tortellini soup. For a heartier option, make sausage and tortellini soup with vegan sausages or go for vegetarian tortellini soup with spinach and mushrooms.

Costco’s Ricotta and Spinach Tortellini is always on my shopping list. It’s perfect with vegan coriander pesto or basil pesto, and the kids love it for school lunches!

Ingredients You'll need

This recipe for Instant Pot Tortellini Soup is pretty much straightforward and you will need only a handful of Ingredients.

  • Fresh tortellini: Ricotta and spinach tortellini, three-cheese tortellini, or vegan cheese tortellini.
  • Oil: Olive oil or any neutral oil.
  • Garlic cloves: Minced or garlic paste.
  • Onion, celery, carrot: I use this basic mirepoix soup base for my tortellini vegetable soup
  • Tomatoes: A can of Diced or fire-roasted tomatoes is best in the recipe. Alternatively use tomato paste.
  • Spinach: I use Fresh spinach. Use Frozen spinach or kale as an alternative.
  • Cream: Heavy or double cream adds the creaminiess. For a vegan alternative, use a vegan cream.
  • Italian seasoning: Homemade or store-bought. I have mentioned the proportions to make it at home in the recipe card below.
  • Vegetable broth or stock :Adds flavor
  • Salt & pepper to taste.
  • Optional veggies: Consider green beans, mushrooms or potatoes
  • Optional herbs: Fresh basil

How to make Instant Pot Tortellini Soup with fresh or frozen tortellini?

To make Tortellini Soup in the Instant Pot, I start by heating the pot on sauté mode and adding oil. 

I sauté the onion and garlic until soft, then add celery and carrots. 

Next, I stir in tomatoes, vegetable stock, and Italian seasoning, and pressure cook on high for 1 minute. 

After a quick release, I add tortellini and cook for 3 more minutes on sauté. 

Finally, I stir in cream and spinach, let the spinach wilt, and serve the soup topped with cheese and optional red pepper flakes.

Total Time Taken for this dish is 25 minutes which includes Prep Time, Pressure Build Up Time, and Cook Time.

How to make Vegan Tortellini soup?

Follow the same method, but use vegan cheese tortellini and vegan cream. You can find vegan tortellini in the fridge section of most supermarkets.

What to serve with Tortellini Vegetable Soup?

This soup is delicious on its own, but you can serve it with homemade garlic knots or easy white soda bread without yeast to soak up the broth. A simple cucumber raita can also help cool down any spicy flavors.

How to tell if tortellini has gone bad?

Check for a sour smell, discoloration, or a slimy texture. If you notice any of these signs, it’s best to discard the pasta.

Ingredients

  • 1 tablespoon olive oil
  • 3-4 Clove garlic minced
  • 1 medium yellow onion
  • 1 stick celery diced
  • 2 medium carrots diced
  • 400 g diced tomatoes or fire roasted tomatoes (15oz can)
  • 2½ cup spinach
  • 300 g cheese Tortellini or ricotta and spinach tortellini 11 oz
  • ½ cup heavy cream or double cream
  • 1 tablespoon Italian seasoning
  • 3 Cup vegetable stock vegetable broth
  • salt to taste
  • ½ teaspoon ground black pepper

Instructions

Instant Pot Instructions

  • Set the Instant Pot to SAUTE mode for 3 minutes. Once hot, add the oil, onion, and garlic. Saute for 2 minutes.
  • Now add carrots, celery, and saute briefly. Add diced tomatoes, vegetable stock, Italian seasoning, salt, and pepper.
  • Secure the pressure cooker lid and turn the vent to a SEALING position. Select PRESSURE COOK and set the cooking time to HIGH PRESSURE for 1 minute. Quick Pressure Release. Open the lid immediately.
  • Select SAUTE mode, add the fresh tortellini. Stir and cook for 3 minutes. CANCEL the Saute Setting. .
  • Stir in the cream and then the spinach leaves. Cover with a lid and allow the spinach to wilt. This roughly takes 3 -4 minutes.
  • Serve warm Tortellini Soup with cheese if you like. Taste and season with more salt and pepper if desired.

Stove Top Instructions

  • Heat Oil in a Pot with a tight fitting lid. Add Onion, garlic and saute for 2-3 minutes until translucent.
  • Add carrots, celery and saute briefly.
  • Now add the diced tomatoes, veg stock, seaoning, salt & pepper to the pot. Cover the pot with a lid and allow the soup to simmer for atleast 8-10 minutes.
  • Now add the fresh tortellini and cook for 3 minutes ( as per the packet instructions )
  • Stir in the cream, baby spinach and return the lid to the pot. Allow the spinach to wilt.
  • Serve the vegetable tortellini soup warm with cheese if you like.

Notes

If you are using Dried Tortellini, add it before pressure cooking. The total time taken for the Instant Pot to come to pressure is about 8-10 minutes
To make Sausage and Tortellini Soup, Select the SAUTE mode and allow it to get HOT. Add Sausage and cook for a few minutes until it's light brown. Follow the remaining steps as above.
To make your own Italian Seasoning at home, use 1 ½ teaspoon Dried Basil, ½ teaspoon Dried Thyme, ½ teaspoon Dried Oregano, ½ teaspoon Dried Rosemary
To make VEGAN TORTELLINI SOUP, Use Vegan Cheese Tortellini and Vegan cream in the recipe.
