ABOUT THIS VEGETARIAN TORTELLINI SOUP RECIPE
Our Midweek meals are all about quick and easy recipes. Something that can be rustled up in 30 minutes or less just like this hearty Vegetarian Tortellini Soup, Instant Pot Mexican Quinoa, or even Palak Paneer.
I like to throw in vegetables and tortellini that are mostly stocked in my refrigerator to cook this hearty supper in a jiffy. A recipe that requires very little prep and mostly hands-off. My trusted Instant Pot works like Magic to cook up this creamy Tortellini Soup with Spinach in about 20 minutes. The recipe comes together in a jiffy and it features on our menu a couple of times a month.
If you don’t own an electric pressure cooker, make it on stove. You still need only one pot and a bit of supervision.
To be honest, this delicious soup is a result of an accident recipe.. When I first made it, I added a can of fire-roasted tomatoes, lots of Italian seasoning, some Chilli flakes, and then the tortellini. Then I realized my kids will find it spicy. So to tone down the heat in the soup, I added Double cream to make it creamy and also stirred in spinach.
Scooped the Pasta Soup in a bowl and topped it with lots of cheese – And our dinner was a huge hit!! Since then I started making this recipe – pretty much in the same method and included more vegetables like celery/carrots to make a hearty veg soup.

Add Sausages to make Tortellini Sausage Soup. Remember to saute at the initial stage.
WHAT IS TORTELLINI SOUP?
Tortellini Soup is a creamy, delicious soup pasta made with tortellini, tomatoes, vegetables, and Italian herbs.
I love to use Ricotta and Cheese Tortellini or Three Cheese Tortellini in the recipe. To make this recipe Vegan use Vegan Cheese Tortellini.
Costco sells large packs of Ricotta and Spinach Tortellini and they are by default on our shopping list. This Tortellini is so good with Homemade Vegan Coriander pesto sauce or even Basil Pesto and kids love to enjoy them for School dinners.
With the leftover Fresh Tortellini, I love making easy peasy midweek meal recipes for a cozy weeknight soup. Sometimes I even like to make Sausage and Tortellini Soup with vegan sausages or just Tortellini Soup with Spinach and Tomatoes.
So easy isn’t it!
Ingredients You’ll need
This recipe for Instant Pot Tortellini Soup is pretty much straightforward and you will need only a handful of Ingredients.
Olive Oil or any other neutral flavor oil
Garlic – Use minced or garlic paste – they will be great
Yellow onion is great in this recipe.Do not sub for Red Onion as the flavors are strong and it will alter the color of the soup
Celery is optional. I tend to add them if I have them in my fridge.
Carrots – Dice them or cut them rounds – they add great texture to the Soup.
Can of Diced Tomatoes or fire roasted tomatoes – Either of them are delicious.
Baby spinach leaves – Wash them and add them to your soup. Don’t have spinach, use kale instead.
Fresh Tortellini – I like to use Ricotta and Spinach Tortellini or Three Cheese Tortellini.
Heavy cream or Double cream adds creaminess to the soup. To make this recipe Vegan use Vegan Cream.
Italian seasoning mix or use a combination of Dried Basil, Rosemary, Oregano and, Thyme. I have mentioned the proportions in the recipe card below.
Vegetable Stock adds tons of flavor to the pasta sauce.
Salt & Pepper to taste.

How to make Instant Pot Tortellini Soup?
It is a pretty simple and straightforward recipe. I would love to dump and start the ingredients, however, sweating the onion and garlic is a game-changer. So I would not recommend skipping it.
Heat the Instant Pot, add oil and then onion, garlic. Saute until it is translucent. This step is essential to make sure the raw flavors are all gone.
Now add the celery, carrots and stir to glaze the veggies. Add the tomato, stock, seasoning, and pressure cook for just 1 minute.
The total time taken for Instant Pot to build pressure is 8 -10 minutes. After 1 minute of cook time, Quick pressure release.
Open the lid, add the tortellini and cook for 3 minutes. Use the packet instructions and cook according to the time mentioned in that.
Stir in cream, baby spinach leaves. Cover and allow the spinach to wilt.
Ladle the soup to bowls, sprinkle cheese if you like and a little more seasoning.
Total Time Taken for this dish is 25 minutes which includes Prep Time, Pressure Build Up Time, and Cook Time.

To make delicious VEGAN TORTELLINI SOUP, use Vegan Cheese Tortellini and Vegan cream in the recipe. Vegan Tortellini is easily available in the supermarket.

CREAMY VEGETABLE TORTELLINI SOUP RECIPE BELOW
Ingredients
- 1 Tbsp Olive Oil
- 3-4 Clove Garlic minced
- 1 medium yellow onion
- 1 stick celery diced
- 2 medium carrots diced
- 15 oz or 400g diced tomatoes or fire roasted tomatoes
- 2.5 cup spinach
- 11 oz or 300g Tortellini
- 1/2 cup heavy cream or double cream
- 1 tbsp Italian seasoning
- 3 Cup of Veg Stock
- Salt to taste
- 1/2 Tsp Black Pepper
Instructions
Instant Pot Instructions
- Set the Instant Pot to SAUTE mode for 3 minutes. Once hot, add the oil, onion, and garlic. Saute for 2 minutes.
- Now add carrots, celery, and saute briefly. Add diced tomatoes, vegetable stock, Italian seasoning, salt, and pepper.
- Secure the pressure cooker lid and turn the vent to a SEALING position. Select PRESSURE COOK and set the cooking time to HIGH PRESSURE for 1 minute. Quick Pressure Release.
- Open the lid immediately.
- Select SAUTE mode, add the fresh tortellini. Stir and cook for 3 minutes. CANCEL the Saute Setting. .
- Stir in the cream and then the spinach leaves. Cover with a lid and allow the spinach to wilt. This roughly takes 3 -4 minutes.
- Serve warm Tortellini Soup with cheese if you like. Taste and season with more salt and pepper if desired.
Stove Top Instructions
- Heat Oil in a Pot with a tight fitting lid. Add Onion, garlic and saute for 2-3 minutes until translucent.
- Add carrots, celery and saute briefly.
- Now add the diced tomatoes, veg stock, seaoning, salt & pepper to the pot. Cover the pot with a lid and allow the soup to simmer for atleast 8-10 minutes.
- Now add the fresh tortellini and cook for 3 minutes ( as per the packet instructions )
- Stir in the cream, baby spinach and return the lid to the pot. Allow the spinach to wilt.
- Serve the vegetable tortellini soup warm with cheese if you like.
