I have chosen to use Olive Oil for this recipe instead of butter, as these roasted potatoes does taste good with Oil too. Using butter is indulgence in the recipe and they do add all the extra oomph factor, but why let them hit your waist, when you can enjoy them guilt free.
Festive Occasions are all about indulgence but, I will let the desserts do the honours and we can splurge on the side dish easily.

HOW TO MAKE GARLIC HERB ROASTED POTATOES?
It is actually pretty simple to make Garlic Roasted Potatoes in Instant Pot. The whole idea is to make it exactly how you would make on the stove top.
First cook the potatoes and then roast it on the pan with garlic, herbs and oil. Pretty simple isn’t it.
I am not really convinced yet with roasting the potatoes first and then pressure cooking and roast again.
I make these Instant Pot Roast Potatoes by pressure cooking the potatoes first. Just add Water, Potatoes and Salt to the Pot. Secure the lid, seal the valve and pressure cook for 5-8 minutes followed by Quick Pressure Release.
I really did not have any water left in my pot and the potatoes were a teeny bit moist.
Alternatively, if you would like the cook the potatoes in the steamer basket, I would recommend 5 minutes of Pressure cooking on HIGH, QPR.
*** Pressure Cooking time totally depends on the type of potaoes..
The next step is to Sauté the Potatoes in the Instant Pot . To the potatoes in the pot, add oil, seasoning, garlic powder, salt and pepper. Gently Stir.
Allow the potatoes to sit in one place for 5-6 minutes before stirring them again. This allows the potato skin to brown and crisp. Repeat this process once or twice until the potatoes are well roasted.
Carefully spoon the potatoes to a serving bowl and season with more salt and pepper if needed. Garnish with herbs and serve.
Couple of things to remember while making INSTANT POT POTATOES
How long to cook baby potatoes in instant pot?
I’d recommend anywhere between 4-8 minutes pressure cook time for potatoes, but what will also change is the pressure release. Pricking and constantly watching is not required.
I found my optimum at 8 minutes pressure cooking, followed by QPR
You can pressure cook the potatoes using Pot in Pot method too { PIP }.
I did not have any water left in my pot. But if you have got any left, remember to drain it before you start sautéing the potatoes with oil and herbs seasoning.
There are a lot of variations you could play around with GARLIC POTATOES.
- Vegetable Broth or Chicken Broth instead of water for more flavour.
- Unsalted Butter instead of Olive Oil to add more depth and flavour.
- Finish the Potatoes with grated Cheese
- Use a combination of spices instead of adding just Italian Herb Seasoning
- Use curry powder, cumin powder & paprika powder and skip the Italian seasoning

- 1 1/2 Lb Baby Potatoes
- 3/4 Cup of Water
- Salt
- 2 Tbsp Olive Oil
Spices
- 2 Tsp Italian Seasoning
- 1/2 Tsp Garlic Powder
- Salt & Pepper to taste
Garnish
- Herbs
- Cheese { Optional }
Instructions
Directions for making Garlic Herb Roasted Potatoes
- Scrub and Wash the potatoes and set aside.
- To the Instant Pot, add water, potatoes and salt.Secure the lid, seal the valve and pressure cook for 8 minutes.
- Quick Pressure release the steam valve. I did not have any remaining water in the pot.
- But if you have any left, Drain any remaining water and place the potatoes in a colander or a steamer basket.
- Press the Instant Pot to Sauté mode. Add 2 Tbsp of oil, Italian seasoning, garlic powder to the Potatoes and give it gentle stir.
- Allow the potatoes to sit in one place for 5-6 minutes before stirring them again. This allows the potato skin to brown and crisp.
- Gently route the potatoes and allow them to sit for another 5 minutes until brown and crisp.
- Repeat for another 5 minutes if required.
- Carefully spoon the potatoes to a serving bowl, season with more salt and pepper if needed. Garnish with herbs and serve.
