INSTANT POT MEXICAN RICE RECIPE

This Instant Pot Mexican Rice is quick and easy one pot rice recipe! Made with 12 staple pantry ingredients, this rice is a fabulous accompaniment to your Mexican Food. Serve them along with your absolute favourites - burritos, tacos or even in wraps.

This authentic rice recipe can be made in your Instant Pot really quickly. Made with a simple ingredients from your pantry, this Mexican rice recipe comes together in less than 30 minutes.  Have you checked out my Cilantro Lime Rice ? 

INGREDIENTS YOU’LL NEED

To get started you will need the following ingredients

WHITE RICE

WATER OR VEGETABLE STOCK

OLIVE OIL

ONION

RED PEPPER

JALAPENOS

GARLIC

CRUSHED TOMATOES

CILANTRO or CORIANDER

CUMIN POWDER

SALT

GREEN PEAS

Gather all the ingredients in one place. It is really quick to make them in your Instant Pot pressure cooker.

HOW TO MAKE MEXICAN RICE WITH STEP BY STEP PHOTOS?

  1. RINSE & DRAIN - Wash the rice under running tap water at least 6 times until clear. Allow the water to drain and set it aside.

  2. SAUTE - Press sauté button on Instant Pot. Add Oil followed by rinsed rice. Stir for 2 minutes.

  3. ADD REMAINING INGREDIENTS - Add onion, pepper, garlic, jalapenos & stir. SAUTE for 30 seconds.

  4. ADD WATER – Add the water or stock, salt & cumin powder and stir. Turn off the Sauté Mode.

  5. TOMATOES - Add Canned Crushed Tomatoes { Remember DO NOT STIR }

  6. PRESSURE COOK – Secure the lid. Turn the valve to sealing position. Select PRESSURE COOK HIGH for 5 minutes. Allow natural pressure release for 2 minutes and then Quick Release any remaining pressure.

  7. FLUFF RICE – Remove the lid after the valve drops. Fluff the rice with fork and add Green Peas.

  8. COVER - Cover with Glass Lid and let the rice rest for at least 2- 3 minutes.

  9. SERVE - Fluff the rice, stir in cilantro. Serve this mexican rice as side dish or in your burritos, tacos or wraps.

Stir chopped sun dried tomatoes or lime juice if you like. { Optional }

TIPS TO REMEMBER to make this AUTHENTIC Mexican Rice

1. Rice needs to washed and rinsed at least 6 times in running cold water and set it aside.
2. Tomatoes does stick to the bottom of the pan. { I have learnt this after making Mexican Rice in my pressure cooker before } SO the key thing is DO NOT STIR THE TOMATOES !
3. Water to Rice Ratio is important to get it right.
4. Type of Rice - To make this Rice Recipe in Instant Pot, I have used White Basmati Rice. You can make them with any other Long Grain Rice but please remember to use the right proportion of water.

This Vegan Mexican Rice is quick and easy one pot rice recipe. Serve as a side dish. Takes just under 30 minutes!

Ingredients

  • 2 tablespoon Olive Oil
  • 1 Cup Long Grain Basmati Rice
  • ½ Cup Onions , chopped
  • ½ Cup Red Pepper, chopped
  • 1 tablespoon Garlic, chopped
  • 1 tablespoon Jalapenos, chopped
  • 1 Cup Water
  • 1 teaspoon Cumin
  • Salt as needed
  • ¾ Cup Crushed Tomatoes
  • 2 tablespoon Cilantro
  • ½ Cup Frozen Green Peas
  • Lime Juice { Optional}

For variation,  add chopped carrots along with onions and peppers.
You can also add chopped sun dried tomatoes along with cilantro just before serving.
