Lauki Raita | Indian Raita Recipes - Meet this super delicious LAUKI RAITA, a refreshing yogurt based condiment made with yogurt, opo squash, spices and herbs. Trust me you will be finger-licking the bowl clean.

Raita is best served chilled along with a main dish, however you may serve this lauki ka raita as a dip for your crackers. It's just too good to resist !

There are so many Bottle-gourd recipes that can be made, surprisingly I don't have a single one yet in this space. Anyways, I'm so glad to share this fantastic Squash Raita with you.  It is absolutely flavoursome and healthy!!!

WHAT IS LAUKI?

Lauki is otherwise known as Bottle gourd squash or Opo Squash in English, and is known for its numerous benefits! It is one of the lowest calorie vegetables - carrying just 14 calories per 100 g.

It also known as Ghiya, Doodhi or Bottle Gourd too! How amazing isn't it!

Easy Indian Raita

Raita as such is another name for Yogurt Condiment, made with Yogurt & fresh vegetables/ fruits along with spices. It is best served chilled along with the main dish.

What can I serve with Lauki raita?

VEGETABLE BIRYANI
SOYA CHUNKS BIRYANI
VEGETABLE PULAO
PANEER BIRYANI
TOMATO RICE

Rayta is a very modest yogurt based dish that can be served with simple spices like cumin powder & salt and herbs like coriander or mint. But you may as well give this modest dish a makeover.

I like to vary my spices, herbs and vegetables in my raita for a change. Also Raita's are the easiest to whip up and works great well for the crowd.

Lauki Raita is a refreshing yogurt based condiment made with yogurt, bottle gourd, spices and herbs. Serve Raita with your main dish or enjoy them as dip for your appetisers.

Ingredients

  • 1 Cup Bottle Gourd lauki, doodhi -grated or cubed
  • 2 Cup Yogurt
  • ½ Cup Mint Leaves
  • 1 Green Chilli
  • ½ teaspoon Cumin Powder
  • ½ teaspoon Chaat Masala
  • ½ teaspoon salt

Seasoning

  • 2 teaspoon Oil
  • 4 Garlic Cloves thinly sliced
  • ⅛ teaspoon Kashmiri Chilli Powder

Instructions

Cook the Lauki

  • Grate the Lauki using the coarse end of the grater. Place them in a pot of hot water and boil for 7-8 minutes until soft.
    Drain the water and place the cooked lauki in the fine mesh sieve. Using the back of the spoon, press the cooked vegetable until most of the water is drained.

Prepare Lauki Mint Paste

  • Place the cooked lauki, mint leaves, green chilli in a blender and process until smooth.

Lauki ka Raita

  • In a large bowl, add the yogurt and whisk them smooth.
    Add lauki- mint paste to the yogurt along with spice powders & salt. Whisk until well combined.

Seasoning

  • Heat oil in a small pan, add the garlic cloves and saute until they turn golden brown. Drain the cloves to a bowl. Add the chilli powder and quickly turn off the flame.
  • Add the seasoning to the prepared Lauki ka Raita. Serve them immediately or place them in the refrigerator to chill until you are ready to serve.
