Try this easy One Pot Mushroom Rice recipe! It’s made with mushrooms, caramelized onions, garlic, and rice. This seasoned rice is incredibly easy to make. It’s really is a simple rice dish with bags of flavor, perfect for weeknights with minimal effort.

One Pot Mushroom rice recipe

This seasoned mushroom rice is for all Mushroom lovers. Made with mushrooms, onions, garlic, and rice, this Mushroom Rice Pilaf is a simple and delicious rice dish. You will only need one pot to cook, basic ingredients, and about 30 minutes.

To make this easy Mushroom fried rice, first, you will sweat the onion, garlic in oil & butter. Then add the mushrooms and allow them to brown. If you think it is sticking to the bottom of the pan, deglaze it with a little water. Add the rice and fry them briefly until they are toasty.

Add the stock, seasoning, and stir them through. Once the liquid has evaporated to the level of the rice, place the lid and allow it to cook for 5-6 minutes. And that’s nearly done.

Open the lid, add a knob of butter and allow it to sit for another 5 minutes. Stir through the green onions. Vegetarian Mushroom rice in under 30 minutes!

For added umami flavors, Add a few more of the sautéed mushrooms towards the end of cooking. They are fantastic for school lunch boxes and as busy weeknight dinners too. The leftovers stores really well in the refrigerator and flavors only get better.

Budget-friendly – Only a handful of easy-to-find inexpensive ingredients are used to make this seasoned rice with mushrooms. Other than mushrooms and butter, all others are staple pantry ingredients.

One-Pot – You will only need One-Pot with a tight-fitting lid for this easy rice recipe.

Easy to Scale – Easy to double, triple, and feed a crowd with this recipe. Want to half the recipe and cook for one, it still works.

Meal – It works as a delicious side dish for 4 or a stand-alone meal for 2.

Dietary needs – It is Vegetarian and Gluten-free. Can be Vegan, if you are using Vegan Butter in the recipe.

Freezer friendly – Can be made in bulk and frozen for later use.

Ingredients

You’ll need a handful of ingredients to make this tasty rice recipe.

Oil and Butter – Use Olive Oil or any other oil you prefer. Vegan or regular butter will add a buttery flavor to the rice. I like to add another tablespoon of butter, after cooking. This enhances the taste of the rice.

Onion and Garlic – Dice the onion, finely. Use a garlic press to mince the garlic or use a grater. You can use store-bought garlic paste for convenience.

Mushrooms – The recipe uses sliced white button mushrooms. You can also use brown button mushrooms, Cremini mushrooms,  Baby Bella,  Shitake Mushrooms, or a combination of your favorites. If you have mushrooms in plenty, try this Mushroom Bhaji or Air fryer Roasted Mushrooms.

White Basmati Rice – I prefer to use Tilda Extra-long basmati rice for rice dishes. Rinse the rice at least 5 to 6 times, until clear. Soak for at least 10 minutes in freshwater. if you prefer, you can also use Long grain rice.

Vegetable stock – Vegetable stock adds a lot to the flavor. Although water will do the needful, stock, broth, and Better than Bouillon vegetarian will make a difference in the dish.

Seasoning – Season with Salt & Pepper to taste. Additional seasoning like Italian seasoning, chilli flakes, soy sauce can be added.

Spring onions – Finish the dish with a sprinkle of green part of spring onions (scallions)

How to make Vegetarian Mushroom rice step by step?

Find the detailed recipe along with measurements in the “Recipe Card“, below.

Rinse the basmati rice at least 5 -6 times until clear. Soak in fresh water for 10 minutes. Drain before use.

Heat Oil/ Butter  – Heat olive oil and butter in a pot with a tight-fitting lid over medium heat.

Aromatics – Add the bay leaf, white onion, and minced garlic. Cook until translucent, about 2- 3 minutes.

Add Mushrooms & Cook – Stir in sliced mushrooms and cook, stirring occasionally, until mushrooms are tender and browned about 5 minutes.

Rice – Add the rinsed white basmati rice and saute for 1 minute until toasty.

Tip in Veg Stock – Stir in vegetable stock/ broth and allow to boil.Season with salt and pepper, to taste. If you like, also add 1 tsp of Italian seasoning or Mixed Herbs.

Cook  Covered -When all the broth has nearly absorbed, cover the rice with a tight-fitting lid and allow it to cook in simmering heat for 5 minutes.

Cook Covered

Remove the pan from the heat, add the remaining butter and allow it to sit covered for 5 minutes. Fluff & Serve – Fluff the rice with a fork, garnish with spring onions, and serve.

Serving Suggestions

Serve this seasoned Mushroom rice on its own as a meal. It’s delicious.

Can I freeze leftover Mushroom rice?

Allow the rice to cool down thoroughly. Store the Mushroom rice in a freezer-safe container and freeze it for up to 3 months.

Although, the texture of the mushrooms will be slightly different when frozen, as compared to freshly made mushroom rice.

How to reheat the Frozen Mushroom rice?

Allow the mushroom rice to thaw in the refrigerator overnight or defrost the rice in the microwave.

Heat the rice thoroughly in the microwave until piping hot. Add a knob of water and fresh spring onions before serving.

Can I make Mushroom rice Vegan?

Yes, the mushroom rice can be made Vegan. Use Vegan butter instead of dairy butter in the recipe. I will not recommend skipping the butter as it adds immense flavors to the seasoned rice.

Ingredients

Instant Pot

  • 2 tbsp oil
  • 2 tbsp unsalted butter
  • 1 Bayleaf
  • 1 medium white onion diced
  • 3 cloves garlic minced
  • 3 Cup Mushrooms Sliced
  • 1 Cup Basmati Rice
  • 1 ½ Cup Vegetable Stock or Broth
  • Salt to taste
  • Pepper to taste
  • 1 Tsp Italian Seasoning Optional

Toppings

  • ¼ cup Scallions Green onions
  • 1 Tbsp Butter Optional
