Mango Lassi recipe

EASY INDIAN MANGO LASSI RECIPE

Lassi is a popular yogurt based drink from the Indian subcontinent. It is available as sweet lassi or salty lassis. However now lassis have all sorts of flavor – some have fruits, some have vegetables.

Our mango lassi is yogurt based smoothie drink with a dash of cardamom! If you love strawberries, try this 5 minutes Strawberry lassi.

My family is a huge fan of mango lassi and this is the first thing they order when you visit and Indian restaurant in UK.  It is a favourite drink for all at Indian restaurants but did you know that Indian Mango Lassis are so quick and easy to make at home.

My family also adores this  3 Ingredients Mango lassi made with mango puree that I regularly make at home. A detailed step-by-step method is mentioned in the recipe.

HOW TO MAKE MANGO LASSI – RESTAURANT CLASSIC RECIPE ?

To make this mango drink, you can use fresh mango, frozen mango or even canned mango pulp.  When you are using fresh mango, you need to a have a ripe sweet variety of mangoes.

When you are making this lassi with canned mango pulp, you can leave out the sweetener or add less in the recipe.  Canned pulp is already sweetened.

If you find your mango is not ripe enough, add more sweetener like sugar or honey or maple syrup to your lassi.

Adding cardamom to the Indian lassi instantly elevates the flavors to restaurant style.

Garnishes are optional. But I will recommend adding them to this restaurant classic drink and you will be immediately transported to the Indian subcontinent!  I like adding some crushed pistachio and saffron. Some people also like to add a splash of rose water.

TIPS & SUGGESTIONS

MEASURE THE MANGOES – If you are using fresh mangoes , peel the skin, scoop out the mangoes and measure the quantity out to 2 cups.

COLD YOGURT – If the yogurt is not very cold, make sure to add a few ice cubes while blending. Otherwise keep the lassi in the fridge for a couple of minutes, add a few ice cubes and serve.

COLD MILK / COLD WATER – Add milk or water is to thin the consistency down. However if you enjoy your lassis thick, add more yogurt.

MANGO LASSI FOR KIDS –  Kids generally do not enjoy saffron threads, so I do not RECOMMEND adding garnishes. My kids are no different. They find it distracting.   Instead, if you would like to include saffron to your lassi, microwave a pinch of the saffron in 2-3 tsp of milk. Let it settle to room temperature. Now blend it along with your lassi

VARIATIONS  you could have to this lassi – Cardamom or rose water or even vanilla essence.

VEGAN MANGO LASSI – Use any vegan yogurt and milk to the same recipe to make it vegan.

How to make HOMEMADE YOGURT with Instant Pot?

To make Foolproof Instant Pot Yogurt at home, you only need 5 steps

Heat the Milk – Pour milk into a saucepan and bring to a simmer over medium-low heat. When the milk creates a foam and starts to rise turn off the flame and set it aside.   This can take approx 15- 20 minutes.

Alternatively pour the milk in the Instant Pot, secure the lid and select Yogurt More function to boil the milk to at least 180°F (it will say “BOIL” on the screen). This  can take approx 35 – 40 minutes. The Instant Pot screen will display  “YOGT” when the boiling is done.

Cool the Milk – Allow the milk to cool down for sometime. To quickly check, dip your pinky finger for 10 seconds and see if you can handle the heat. Transfer to a bowl.

Add the Yogurt Starter –  In UK, Onken Yogurt has live bacteria. Add 2-3 tablespoon of yogurt into the milk and stir to combine well.

Set the Yogurt -Place the Bowl in a warm place to set. Alternatively place the bowl on the trivet placed in the inner pot of the Instant Pot. Select Yogurt Button and adjust the time for 8- 10 hours.

Enjoy Homemade Yogurt – Refrigerate and enjoy as desired!
