 Its Pink !! Its October ! Yes We are in Pinktober.

Its a Breast Cancer Awareness month all over the world. UK Cancer Society uses this period to raise awareness of the diseases and raise funds for research into its cause, prevention and cure.  This is the month, where the community wear Pinks, float the signature pink ribbons, hosts a pink parade since it was first introduced back in 1991.

Eiffel Tower was lit up in a rosy pink light to symbolise support. So did the US army with the Pink Camouflaged uniform . I thought of doing my bit as well to help raise awareness and drive the fundraising efforts by focusing on the importance and value of friendships during Pinktober. Friendship is one of the most precious assets in our life, in celebrating times and in times of adversity.

 
Blogging is an effectual community where people from all walks of life , all around the globe with varying wide experiences come together to punch in a few keys in their niche domain . I began my journey of blogging about 7 years ago with an intention of compiling my online journal of recipes from family for future reference.
 

Gazing through the wonderful blogs online,I finally let Sandhya's Kitchen come to Life with a new beginning , a new story to unfold with each post. My journey so far has bonded me with a lot of bloggers because of likemindedness and some serious odd coincidences. Very rarely two people would have resembling life experiences, skills and platform, but while blogging ,I have come across many .

It is a periodic and multiplying circle of connections that begins with your first blogger friend and never really ends.We chat over an issue, be it plagiarism. Learn how to stop it , overcome it or sometimes if its happening for the first time how to overlook it.
We learn about food styling and shots mutually. How could we have improved upon it ? What is the best way to get there? Chalk Talk about the Exif settings on an image and how did either of us achieve it . Oh man !! sometimes time just passes in a day .

We cherish over someones win in an event and on an achievement.Stay with them through their thick and thins. Miss their virtual presence in the social world, when they are away for a while.

There are days, we spend exchanging images of our recent shoots , trying to get an honest feedback , rather than it is fantastic all the time ( which a lot of people comment on social network for the heck of it) . Giving advice in friendship can be challenging. But to take it in the right spirits in more important . Good friends always transcend selfish motives and gains.

Some of the e-friends that I have made while blogging are more than that. They have enhanced my life as well as understood our shared friendship. Since many of us live thousands of miles away, the very thought of catching up , gossiping and gate crashing itself leaves some goose pimples on me.

With this very note , I leave you to cherish your friendship with fellow bloggers this Pinktober and spread awareness. Wraps have been in my quick on the go list for a while . Since I have been rambling about friends and friendship in my social media world, the recipe today is my take on the Frankie Rolls that is found in Mumbai,India in food corners and joints. Its usually a hangout place that we visit with friends. Chutneys are a must to give "THE KICK" factor. Read on and make this super delicious wrap. Bet you can't stop with one.
 

SPICY POTATO WEDGES WRAP
Serves 4 | Time Taken 30 Minutes

Spicy Potato Wedges Wrap (1 of 1)-2
 
Ingredients:
For Wrap :
 4 Mission Deli Wraps
 Spicy Potato Wedges
Mixed Peppers, sliced thin
Red Onions, sliced thin
cheddar cheese (Optional)
Masala Ketchup
Coriander Chutney
 
For Masala Ketchup:
1 Tsp Oil
ยฝ Red Onions, finely chopped
1 teaspoon freshly grated ginger
1 small clove of garlic
1 no green chilli, finely chopped
ยฝ teaspoon Cumin powder
 
4- 5 Tblspn of Tomato Ketchup
 
For Coriander Chutney
1 Cup Coriander Leaves
Less than ยผ cup of Mint leaves
ยฝ chopped Red onion
ยฝ inch ginger
ยฝ green chilli
Good squeeze of lemon juice
ยฝ teaspoon Brown Sugar
Salt to taste
 
Directions:
For Masala Ketchup : 
Heat a teaspoon of Oil. Once heated add finely chopped onions followed by ginger,garlic and finely chopped green chilly. Add 1 Tblspn of water and cumin powder and saute for 2 more minutes. At this stage add the Tomato Ketchup along with 3 tblspn of water approximately. cook until syrupy consistency.  Turn off the flame. Once the mixture is cooled, blend it to a smooth consistency.
 
For Coriander Chutney
Add all the ingredients and blitz to a smooth fine paste. Season to taste. Add a little more water to make a runny consistency. Transfer the content into a bottle and refrigerate until you are ready to use.
 
Assembly:
Preheat the oven to 220 C . Line the the baking tray with a baking sheet , arrange the potato wedges on them. Bake for 18 minutes or until they turn golden and crispy.
Heat the Wraps as per the pack instructions. I placed my wraps on my grill pan and pressed them gently with a spatula to give the line marks. Assemble by adding a couple of spiced potato wedges approximately 6,followed by a scattering of mixed peppers and onions.Add dollops of Coriander Chutney,finely chopped coriander leaves and Some grated cheese. Roll them up and serve.
 
Notes:
Since I was pressed for time, I decided to use the Frozen Potato Wedges. If you have time, you could make it from scratch. Cut the potatoes in wedges,season it well and bake it.
Adding Ketchup or chutney is to your liking. You may add both together into the wrap.
I made one of my wraps, by adding dollops of green coriander chutney and served it along with Masala Ketchup.
