This Air Fryer Courgette Fritters recipe is a great way to get everyone to enjoy their veggies. Crispy and nutritious, these fritters are perfect as a snack, side, or burger patty. Making them in the air fryer is quick and easy, and I love adding them to my weekly dinner rotation!

I love cooking easy, veggie-packed recipes that are so good, I end up making them again and again. These vegan courgette and sweetcorn fritters are exactly that! They’re simple, inspired by one of our reader's favorite onion bhaji recipe, and super tasty. What I also love is that I don’t use any plain flour, and the recipe doesn’t need eggs!
Courgettes are often underrated, but when cooked right, they’re incredible! Ingredients

- Courgette (Zucchini): Grate it and let it rest to release the juices.
- Gram Flour (Chickpea Flour/Besan): This gluten-free flour binds everything the courgette and sweetcorn together and gives the fritters their classic bhaji flavor.
- Spring Onions(Green onions): Finely chopped for extra flavor.
- Optional Add-ins:Nutritional yeast, fresh ginger, garlic, cashew nuts, grated carrots.
- Oil: Use sunflower or vegetable oil – I don’t recommend coconut oil.
Substitutions & Notes
- Chickpea Flour: Swap with self raising flour
- Spring Onions: You could add fresh dill or any of your favorite fresh herbs.
- Fresh Garlic: You can use ½ a teaspoon of garlic powder instead.
- Rice flour(Optional): For a further crispy fritters, add 1 tablespoon of rice flour just like in our vegetable pakoras or crispy air fryer potato slices.
How to make vegan courgette fritters in air fryer?
- Grate the courgette with a box grater and sprinkle with salt. Let it rest for 30 minutes, then squeeze out as much liquid as possible.
- In a bowl, mix the squeezed courgette, sweet corn, spring onion, spices, and chickpea flour. Combine until it forms a thick batter that holds together when squeezed.
- Line your air fryer basket with parchment paper.
- Scoop out the mixture with an ice cream scoop, roll into balls, and gently flatten into patties. Place on the parchment.
- Spray the patties with cooking spray (I use olive oil spray).
- Air fry at 180°C (350°F) for 8-10 minutes, flipping halfway through, until the zucchini fritters are golden brown and crispy.
How to make vegan courgette fritters on skillet?
- Heat oil in a skillet/ frying pan over medium heat. Using an ice cream scoop or large ladle, scoop out the batter and place it gently on the skillet.
- Cook the fritters on low to medium heat for 4-5 minutes on each side, until golden brown. Avoid cooking on high heat, as this can leave the fritters uncooked in the middle.
- Once cooked, drain the fritters on a kitchen towel to soak up any excess oil.
Storing leftovers
Store any leftover courgette fritters in an air tight container in the fridge for upto 5 days. To reheat, place it back in the air fryer basket and air fry at 180C for 3-4 minutes. You could also reheat in a skillet.
Serving Suggestion for Air fryer Courgette fritters
I love serving courgette fritters with a garlic yogurt sauce, boom boom sauce or a vegan burget sauce too.
Pair them with vegan naan bread, speedy chana masala and masala chaas for Curry night.
Recipe FAQ's
If your courgette fritters aren’t crispy, it’s likely because there’s too much moisture left in the courgette. Make sure to squeeze out excess liquid before forming the patties. If they’re still not crispy, try increasing the temperature to 400°F (200°C) and cooking for an extra minute.
If your fritters are dry, you may have added too much flour. Lightly spray them with cooking spray and air fry for an extra minute to help restore moisture.

- Air fry at 180°C (350°F) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Stove top Instructions
- Heat oil in a skillet. Place the the scooped fritter batter into the skillet and cook for 4-5 minutes until golden brown on each side. Flip again and cook for another 4-5 minutes. Drain the vegan zucchini fritters onto a paper towel to remove any excess oil.
- Repeat the process with remaining batter.
- Serve with prepared Zucchini fritters with Avocado dip & vegan ranch sauce.

I am not sure about the flaxseed meal. But you can use plain flour instead. Although the texture will be different.
