Something really special about this Vegetable Fried Rice is the Indo-Chinese flavors in this recipe. This recipe for VEGAN Veg Fried Rice extremely easy to make, ready in 15 minutes. They taste delicious on their own and just out of the world when paired with a Saucy Gobi Manchurian or a Schezwan Chilli Potatoes.

This Easy Vegetable Fried Rice always comes in handy when I want to make something extremely flavorsome and really quick. I have grown up eating this Veg Fried Rice at Indo-Chinese Restaurants and my family calls it Mummy’s special Vegetable Fried Rice recipe that comes together in barely 15 minutes.

WHAT KIND OF RICE CAN I USE FOR FRIED RICE? 

The BEST Fried Rice is best made with leftover rice, specially a day old cooked rice – that has been cooked and refrigerated.  All that needs to be done, is to separate the rice with your wet fingers before adding it to the wok.

You can use any rice – Basmati Rice, Long Grain Rice, Broken Basmati Rice, Brown Rice, Jasmine Rice, Shortgrain Rice – literally anything. Just remember to Always avoid using sticky or glutinous rice to make the recipe.

What if I don’t have any left over rice? Well, there is nothing to worry. Cook freshly steamed rice and spread it in a baking tray, allow it to cool down completely before it goes into the wok. Fork it up before use. Just remember to cook with slightly less water than usual as it allows the rice grains to stay separate.

The other Instant Shortcut Rice is to use Heat and Serve Microwaveable Ready to Use Rice.

WHAT VEGETABLES TO PUT IN FRIED RICE?

Vegetable Fried Rice

I like to add mixed Vegetables like Carrots, Green & Red Peppers, Green Peas, Celery, Red Onions and Spring Onions. But you can also add Baby Corn, Green Peas, Cabbage, Asparagus, Snow Peas and may be some greens too. But with the Easy Indo Chinese Fried Rice Recipe, I like to keep it simple and add the ones that cook in a jiffy.

Sometimes I like to stir in some scrambled eggs to make Egg fried rice too.

WHAT ARE THE SEASONING IN A FRIED RICE?

In an Indo Chinese Fried Rice,

seasoning is Ginger Garlic, Soy Sauce and Vinegar. I like to add Vegetable Stock Cube too { flavours are just mind-blowing } , but you can give it a miss if it not available.

One question I am often asked is How do you make Indian Vegetable Fried Rice? Is it any different from Chinese Fried Rice?  Well, for us simple Fried Rice is our favorite Indo – Chinese Version.

VEGGIE FRIED RICE

Chinese Food has been always loved in our family. So if ever my family wants to dig into something tasty, something super quick, they always ask for this tasty Healthy Vegetable Fried Rice. 

I really wish we had an awesome takeaway service in the vicinity, that I could just pick my phone and ring for a comforting Biryani with Raita or some Chinese Fried Rice with some Manchurian or Some Red Thai curry with steaming Rice.

  • Is Healthy and ideal to incorporate lots of vegetables

  • Can be made with Brown Rice or even Cauliflower Rice too.

For The Best Fried Rice Ingredients, What You’ll need

Cooked Rice – White Basmati Rice or Long Grain or Ready to eat Rice

Mixed Vegetables  We love to use carrots, peas, bell pepper

Spring Onions & Red Onions

Vegetable Stock

Ginger & Garlic

Soy Sauce

Rice Wine Vinegar – But any vinegar will also do

Chilli Powder for some heat

Sugar

Salt & Pepper to taste

Sesame Oil

I’ve got this recipe for a super speedy, Indo-Chinese Vegetable Fried Rice for when I want a takeaway but decide to fake it instead. This Asian fried rice can be prepared in less than 20 minutes and they pair really well with a deliciously protein-rich Soybean Manchurian.

Why Takeaway when you can fakeaway such an amazing Chinese Fried Rice at home in 15 minutes. Made with Rice, Mixed Vegetables, Ginger- Garlic, Soy Sauce, and Vinegar. So delicious!

Ingredients

  • 280 g Cooked Rice
  • 250 g Mixed Vegetables – Carrots, Green & Red Peppers & Green Peas
  • 1/4 Cup Chopped Spring Onions
  • 1 Small Red onion finely chopped
  • 1 Tbsp Light Soya Sauce
  • 1 Tsp Rice Vinegar
  • 1/2 Tsp Red Chilli Powder
  • 1/2 Tsp Sugar
  • 1/4 Tsp Black Pepper
  • Salt  to Taste
  • 1 Vegetable Stock Cube
  • 1 Tbsp finely chopped ginger
  • 1 Tbsp finely chopped garlic
  • 1 Tbsp Sesame oil or any other vegetable oil

Instructions

  • Chop the Carrots, Green and Red Peppers to the size of Green Peas.Finely chop Spring onions separating the white and green and set it aside.
  • Heat oil in a wok. Once heated, add garlic & ginger. Fry for just a few seconds. Add the white of Spring Onions, chopped red onions and saute for 2 minutes or so. Add the vegetable stock cube, Mixed vegetables, leaving the green peas aside for a little later. Saute in high flame, tossing for a couple of minutes, just enough to leave them crunchy.Add the green peas and saute them for 2 more minutes.
  • Add Soya sauce, Rice Vinegar, Red Chilli Powder, Sugar, Pepper and needed Salt. Mix them well.
  • Add Rice and stir fry with the vegetables for exactly 2 minutes. Turn off the flame, add the green of Spring Onions and serve.
  • Serve them as it is or with a delicious Indo Chinese Gravy like Gobi Manchurian or Soya Manchurian.

Notes

** Fried Rice tastes best with Sesame Oil. But you may as well use any other oil, if sesame oil is available
** Add Salt carefully as there is enough salt in Soy Sauce.
