Palak Paneer { Indian Cottage Cheese in Spinach Gravy } is a delicious Indian Curry served along with Roti or Rice.

Ingredients
  • 600 g Spinach
  • 1 " Ginger Piece
  • 2 Green Chilly
  • Water as needed Approx 1/2 - 1 Cup
  • 1 Tbsp Sunflower Oil
  • 1 Tsp Grated Ginger
  • 1 Tbsp Garlic Puree
  • 1 large Onion finely Chopped
  • 1 large Tomato finely chopped
  • Lemon Juice - Squeeze of 1 Whole Lemon
  • 1 Tsp Garam Masala
  • 1 Tsp Coriander Powder
  • 1/2 Tsp Turmeric Powder
  • 2 Tbsp Kasuri Methi
  • 4 Tbsp Heavy Cream or Cashew Cream or Coconut cream
  • Salt to taste
  • 250 Paneer Cubes Substitute with Tofu for Vegan Option
Seasoning
  • 1 Tsp Oil
  • 1 Tsp Cumin Seeds
Instructions
  1. Place the cubed Paneer in a pot of Hot water. This step is essential to keep the paneer soft.
  2. Blanch the Spinach in Hot Water along with 1/2 Tsp Baking Soda. Once the Spinach leaves are wilted, drain them to a colander under running tap water.
  3. Add Spinach, ginger, chilly to a mixer jar or a high speed blender and whizz until you get a smooth puree.
  4. Heat oil in a deep bottom pan, add finely chopped onions, ginger & garlic and a pinch of salt. Saute them together.
  5. Allow them to cook until translucent.
  6. Add chopped tomatoes and saute until they mix well. Allow the tomatoes to cook for another 3-4 minutes until they soften.
  7. Add the spice powders and stir to combine.
  8. Add the smooth Spinach Puree along with water from the blender jar to the onion tomato masala paste.
  9. Cook in medium flame until the spinach gravy begins to boil. Reduce the heat, add lemon juice, kasuri methi & salt.
  10. Stir in Cream & Paneer and cook for just 2 minutes. Turn off the flame.
Prepare the seasoning
  1. Heat oil in a pan, add cumin seeds. Once they begin to sizzle, add them to the palak paneer.
  2. Stir in cream for garnish, sprinkle some more kasuri methi to Palak Paneer curry.
  3. Serve hot Palak Paneer with Roti's or even Steaming hot Basmati Rice.
