1TbspOlive Oil
1CupLong Grain BASMATI RICE
1 1/4CupVegetable Stock
1TbspButter
Lime Zest of 1 Lime
2TbspLime Juice
3/4CupCilantro Leaves
Salt to taste
Instructions
RINSE & DRAIN - Place the Basmati Rice in a colander and wash it under running tap water, until it is clear.
SAUTE - Press sauté button on Instant Pot. Add Oil followed by rinsed rice. Stir for 1 minute. This step helps in avoiding the rice sticking to the bottom of the pot. { Optional }
ADD STOCK - Add the stock and stir. Turn off the Sauté Mode.
PRESSURE COOK - Secure the lid. Turn the valve to sealing position. Select PRESSURE COOK HIGH for 5 minutes. Allow natural pressure release for 3 minutes and then Quick Release any remaining pressure.
FLUFF RICE - Open the Instant Pot lid after the valve drops. Fluff the rice with fork.
ADD THE REMAINING INGREDIENTS - Add Butter, Lime Zest, Cilantro leaves, Lime Juice and Salt. Stir to combine.
SERVE - Serve this delicious side dish with your favourite homemade burrito bowl.
