Ingredients
1½tbspblack tea leavesAssam or Darjeeling tea
2inch fresh ginger
8 -10black peppercorns
6Green cardamom
1" cinnamon stick
2cloves
2tspSugar
1cupmilk
2cupwater
Instructions
Gently pound the spices and bash the ginger. Add the spices, tea, and boiling water to a saucepan. Bring it to a boil and then simmer for at least 5 minutes until fragrant.
Add sugar, milk and turn up the heat. Bring the chai to a boil.
Allow it to simmer for 5-6 minutes, stirring in between.
If you like a stronger flavour, simmer for another 3-4 minutes.
Strain the chai through a fine-mesh sieve into a teapot or cups. Serve.
Notes
You can use all the spices or leave out some to your liking. Do not Ginger and Cardamom. Gently bash the spices and ginger using a rolling pin.I like to add about 1 tsp of sugar per serving.Allowing the chai to brew longer will maximize the flavors.
