Ingredients
  • 1 1/2 Cup Long Grain Basmati Rice
  • 1 1/2 Cup Vegetable Stock
  • 11/2 Cup Canned Crushed Tomatoes | Passata Sauce
  • 2 Tbsp Olive Oil
  • 1/2 Cup Finely Chopped Onions
  • 2 Tsp Minced Garlic
  • 3/4 Tsp Cumin
  • 1/2 Tsp Cayenne Pepper | Chilli Powder
  • 11/2 - 2 Tsp Salt
  • 2 Tbsp Cilantro | Coriander leaves
Instructions
Preparing the Rice & Other Ingredients
  1. Wash the rice under running tap water at least 6 times until clear. Allow the water to drain and set it aside.
  2. In the meanwhile, chop finely chop the onions and mince the garlic.
  3. Stir in a vegetable stock cube in 11/2 Cups of Hot Water.
Making Instant Pot Mexican Rice
  1. Remember to place the Inner Pot inside the Instant Pot. Put instant pot on sauté mode high. When the screen displays HOT, add oil. Once heated, Add finely chopped onions and minced garlic and saute for 2 minutes until onion is translucent.
  2. Add rice and saute for 3 minutes until oil glazed.
  3. Switch off the sauté mode and add Vegetable Stock, Cumin Powder, Salt and Cayenne Pepper.Stir.
  4. Add Canned Crushed Tomatoes { Remember DO NOT STIR }
  5. Select the manual (or pressure cook) setting, make sure the pressure is set to high and set the timer to 5 mins. It takes approximately 7 minutes+ for the IP to kick in.
  6. Cook till done. Once the timer beeps after 5 minutes, Allow it to release naturally and then do the Quick Pressure release. Just as the Safety Pin drops, open the pot and allow the INSTANT POT MEXICAN RICE to sit undisturbed for another 3 minutes. Fluff the Rice with a fork.

  7. Stir in Cilantro. Check for seasoning and add more salt if needed. Enjoy Mexican Rice along with your favourite Mexican food like Burritos, Taco's, within the Wraps or Cheese Enchiladas!
Making Mexican Rice in the Pressure Cooker
  1. Follow the steps above as it is until you select the pressure cook setting.
  2. While making the rice in the pressure cooker, pressure cook the Rice for 2 whistles and turn it off. Allow the steam to release naturally. Fluff up the rice with a fork and serve them hot.
