Ingredients
2TbspOlive Oil
3Clovesgarlicfinely chopped
1medium white onionfinely diced
1cupzucchinidiced
1cupcarrotdiced
1cupcannellini beanscooked
400gTomatoes with tomato juice
½cuppasta
3 ½cupvegetable broth
2cupsbaby spinach
3bayleaf
1tbspItalian seasoning
salt to taste
½tsppepper
Instructions
Press Sauté on your Instant Pot. Once it displays HOT, add oil, garlic and onions. Sauté for 1 minute.
PRESS CANCEL.
Add the zucchini, carrots, cannellini beans, canned tomatoes, pasta and vegetable broth to the pot.
Now add spinach and stir to give all the ingredients a good mix.
Season with Italian seasoning, black pepper and salt.
Add the bayleaf.
Secure the lid, seal the valve and pressure cook HIGH for 5 minutes. Quick Pressure release the steam.
Open the lid after the valve drops and carefully stir the soup.
If you feel the soup is watery, just press Sauté and allow the soup to boil for a couple of minutes.
Ladle out the soup into bowls and serve with rusty bread.
