Ingredients
100gPlain Flour
100g Caster Sugar
100gRolled Oats
85gDesiccated Coconut
100gUnsalted Butter
2TbspGolden Syrup
1tspBaking Soda
2TbspBoiling Water
Instructions
Preheat oven to 180C/ 160°C fan, gas mark 4.
Line the baking tray with grease proof sheet.
In a mixing bowl, add the dry ingredients - Flour, Oats, Coconut, Sugar and stir.
Heat a pan, melt the butter, and then the golden syrup. Mix the baking soda to 2 tbsp. boiling water, and then add to the pan. When you add the bicarbonate – water mixture to the pan, it gets frothy. Do not Panic!
Make a deep well in the middle of the dry ingredients and pour the wet mixture. Combine using a wooden spoon.
Scoop 1 tablespoon mixture into balls and flatten into patties. Place them 2.5cm/1 inch apart to allow room for spreading on the greaseproof sheet.
Bake for 8-10 minutes until golden. Stand on tray for 5 minutes and then Transfer to a wire rack to cool.
Notes
Anzac Biscuit mixture is forgiving. The mixture should be pliable enough to roll into balls and flatten them.If the dough is too sticky, add more flour, coconut, or oats. If the dough is falling apart, add more melted butter.
