This easy Tofu Manchurian is healthy, delicious and, VEGAN. Serve with Cauli rice or Garlic Noodles for a fantastic meal combo.

Ingredients
For the tofu
450gtofu - Cut into cubes
1tbspolive oil
2tspdark soy sauce
1tspginger garlic paste
For the Sauce
1TbspSesame oil
2spring onions finely diced
1Tbspginger minced
4-5clovesgarlic diced
1small white onion cut into 1” pieces
1red pepper cut into 1" pieces
1green pepper cut into 1" pieces
1TspBlack Pepper
1Tbspketchup
1Tspdark soy sauce
1TspChilli Sauce
65mlwater
Salt to taste

Instructions
Place the tofu cubes in a rectangle dish.
Drizzle the 3 remaining tofu ingredients on top and toss to coat. Allow the tofu to marinate for at least 10 minutes.
Prheat the air fryer 200°C for/ 400 F for 2 minutes.
When the display indicates Add Food, place the marinated Tofu into the frying chamber and air fry for 10 minutes. At halftime, shake the basket so that they are evenly cooked.
Once the air frying is done, remove the crispy tofu and set it aside.
In the meanwhile, heat oil in a wok, add the spring onions, ginger and garlic, and cook for 1 minute until fragrant.
Add the white onion and peppers, and toss over high heat for another 1 minute.
Now add the black pepper, sauces - tomato ketchup, soy sauce, chilli sauce, and water and mix together. Reduce the heat and cook for 2 minutes.
Add the crispy tofu and stir to coat well.
Taste and season with salt if needed.
Garnish with Spring Greens, sesame seeds, and serve with cauliflower rice.
