Ingredients
1small head Cauliflowercut into small florets
1Carrotsliced
15Mushroomhalved
1CourgetteZucchini , sliced
1medium red Onioncut into wedges
2TbspOlive Oil
1TspLemon Juice
1TspItalian seasoning or Herb de Provence
3clovesGarlicminced
Salt to taste
1/2tspFresh crackled pepper
Instructions
Preheat the air fryer to 180 C/ 350 F for 3 minutes.
In the meanwhile combine olive oil, lemon juice, garlic, Italian seasoning, salt and pepper to a bowl.
Pour the marinade over the vegetables and toss to combine. Leave it to marinate for 15- 30 minutes( optional step)
Transfer the seasoned vegetables to the air fryer basket , shake to spread them out in a single layer. Cook for 10 - 12 minutes, stirring every 5 minutes until tender, crunchy and perfectly roasted.
