Wash Rice under running tap water and keep it aside for atleast 30 minutes.Heat butter in a non-stick pan. Alternatively, you could use a combination of oil+ butter.Once heated, pop in the whole garam masala’s. Fry them for 1-2 minutes until done. At this stage, add the washed rice and fry them for roughly 3-4 minutes until all the water gets evaporated. Add 3 cups of boiling water and allow to cook until its 3/4 done. Drain the excess water and spread them on a large plate. Remove the whole spices before stirring into the Soya Chunks marination if you do not enjoy whole spices :)
Whilst the rice is set aside, soak Soya Chunks in Hot water for 10 -15 minutes minimum. Squeeze out all the water and place them in a large bowl. Add the ingredients for marination to the soya chunks and coat them well. Set it aside for at least 30 minutes to a maximum of 2 hours.
Heat Oil/Ghee in a large pan, add Sliced Onions and Fry until translucent.
Add marinated soya chunks, ginger garlic paste and fry for 2 more minutes over medium flame.
Add finely chopped tomatoes,Chilli Powder, Turmeric Powder and coriander powder. Fry until the tomatoes become soft. Add 1/4 -1/2 Cup of Water when the onion tomato mixture comes together.
Add frozen green peas and give it a stir.
At this stage add the cooked rice to the soya chunks mixture, sprinkle garam masala, cardamom cinnamon cloves powder and cover the pan with lid and cook for 10 min in really low flame.
Turn off the flame and allow the rice to stand for sometime before you stir them to combine.
Garnish with finely chopped coriander leaves.
Serve Soya Biryani hot with Boondi Raita and salad.
