ADD WATER – Add the water or stock, salt & cumin powder and stir. Turn off the Sauté Mode.
TOMATOES - Add Canned Crushed Tomatoes { Remember DO NOT STIR }
PRESSURE COOK – Secure the lid. Turn the valve to sealing position. Select PRESSURE COOK HIGH for 5 minutes. Allow natural pressure release for 2 minutes and then Quick Release any remaining pressure.
FLUFF RICE – Remove the lid after the valve drops. Fluff the rice with fork and add Green Peas.
COVER - Cover with Glass Lid and let the rice rest for at least 2- 3 minutes.
SERVE - Fluff the rice, stir in cilantro. Serve this mexican rice as side dish or in your burritos, tacos or wraps.

For variation, add chopped carrots along with onions and peppers.You can also add chopped sun dried tomatoes along with cilantro just before serving.
