Ingredients
1bunch mint30g
5tbspboiling water
4tbspwhite wine vinegar
2tbspsugar
1/2tspsalt
Instructions
Strip the mint leaves from the stalk. Chop it finely and set aside.Discard the stalk.

In a small bowl, add boiling water and sugar. Stir to combine.
5 tbsp boiling water, 2 tbsp sugar
Add vinegar, salt and mix together.
4 tbsp white wine vinegar, 1/2 tsp salt
Finally add the chopped mint leaves and mix. Allow it to stand for at least 1 hour for the flavours to develop. Serve.
Notes
Taste and adjust the sauce to your liking. This mint sauce is really versatile. If you enjoy really sharp flavours, add more vinegar. Like it sweeter, add more sugar.If you find the sauce is too thin, add more mint leaves.
