Indian Kachumber Salad recipe

Ingredients
⅓
cucumber (120g)
diced to 1/4 inch cube

salad tomatoes (120g)
diced to 1/4 inch cube
½
red onion (60g)
diced
½
lemon juice
½
tsp
salt or add more

ground black pepper

fresh coriander leaves
chopped
Instructions
Combine all the ingredients in a small bowl.Toss the ingredients together well to mix the flavours.Taste and adjust the seasoning.

½ tsp salt or add more,
3 tbsp fresh coriander leaves
Serve the fresh and light Kachumber salad. You can also allow the salad mixture to sit for 10-15 minutes to let the flavours meld together.
Store any leftover salad in the refrigerator.The salad will keep well for up to two days.
