Ingredients
For the Salad
½head of Red cabbageshredded
2 Carrotscut into matchsticks or shredded
½Red Onionshredded
½cupFresh corianderor more
For the Dressing
3tbspApple cider vinegar
3tbspOlive oil
1tspLemon juice
1tbsp Maple syrup
Salt & Pepper to taste
Instructions
Prep the dressing: In a mason jar, combine the apple cider vinegar, olive oil, lemon juice, maple syrup, salt, and pepper. Give it a good shake to mix everything together. Alternatively, you can whisk the dressing ingredients in a bowl.
3 tbsp Apple cider vinegar, 3 tbsp Olive oil, 1 tsp Lemon juice, 1 tbsp Maple syrup, Salt & Pepper to taste
Assemble the slaw: Place the shredded red cabbage, carrots, red onion, and fresh coriander in a large bowl.
