In a large saucepan, pour a kettle of boiling water over the diced potatoes and add salt. Allow them to cook for 5-7 minutes until they are fork-tender.

Drain the potatoes and let them rest in a colander for 5 minutes.
In a bowl, toss the potato cubes with oil, salt, and pepper until evenly coated.

Transfer the seasoned potato cubes and garlic on a baking tray and then into the oven and cook for 25-30 minutes, flipping them halfway through the cooking time.

Coook for an additional 10-12 minutes or until the potatoes are nicely roasted.
