Remove the leaves and trim the stalk of the cauliflower to make sure it sits flat.
Steam the cauliflower:
Fill a deep lidded pan with water, about 3-4 cm deep.Add salt and bring the water to a boil.
Place a trivet inside the pan and carefully place the cauliflower on it. Cover the pan and steam for 5 minutes.
Remove the cauliflower from the pan and let it steam-dry for 8-10 minutes.Gently pat dry any excess water using kitchen paper.
Make Marinade and Coat the cauliflower
In a bowl, combine yogurt, lemon juice, garlic, ginger, spices, oil, and kasuri methi.
Brush the cauliflower with the prepared marinade until it's evenly coated.
Air Fry:
Preheat the air fryer to 360°F (180°C).Place the marinated cauliflower in the air fryer basket.Air fry for 10-12 minutes, or until the cauliflower is tender and has a nice golden color on the outside.
Garnish and Serve:
To serve, place roasted whole cauliflower on a plate.Drizzle yogurt garlic sauce and garnish with pomegranate seeds, coriander, mint and lemon wedges.
