This roasted courgette soup is a breeze to make in the oven/ air fryer. Plus it makes great lunch or dinner recipe for a chilly days.

660gcourgettescut to juliennes 2 large

150gpotato

120gfrozen green peas1 cup
1sprig thyme
2tbspfresh basil
salt to taste

Air fryer roasted courgette soup recipe
To make air fryer roasted courgette soup, toss the courgette, potato, onion, thyme and garlic with skin on with olive oil, salt, and pepper.
Transfer to the air fryer basket or a baking dish that will fit inside the air fryer. Bake at 360F (180C) for 18-20 minutes or until courgette is well roasted.
In the mean while, dissolve 1 stock cube in 700ml hot water. Add the green peas and allow it thaw.
Once the veggies are roasted, remove the thyme. Add the roasted veggies along with vegetable stock, peas and basil to a blender jar and puree the soup to a smooth and creamy consistency.
Serve soup hot with garnishes.
Oven roasted courgette soup recipe
Preheat the oven to 180 C. Add courgettes, onions, thyme and garlic in the baking dish. Generously drizzle olive oil. Sprinkle some salt and bake them for about 40-50 minutes until well roasted or until the courgettes just begin to char at the edges. Check every 10 minutes to avoid getting burnt.
In the mean while, dissolve 1 stock cube in 700ml of hot water. Add the green peas and allow it thaw.

To serve, add a swirl of coconut milk or cream, top it with garnishes like air fried croutons and basil. Serve with a warmed bread roll.

Notes: Sometimes I like to serve with a good sprinkle of Old Bay seasoning or Cajun seasoning. They are so good!For a spicy version, I add one Jalapeños to the blender jar while processing the soup smooth.
