You’ll need 11 ingredients to make this easy Zucchini soup in the oven or the air fryer.
- Courgettes (Zucchini): A versatile vegetable that adds a mild, earthy flavour to the soup.
- Onion: Opt for white onion or shallots. If you’re out of onions, leeks make a great substitute, providing a savoury base to the soup.
- Potato: adds thickness to the soup.

- Herbs: I prefer thyme and basil. Alternately, you can use fresh mint. it is so good.

How to make Air fryer roasted Zucchini soup recipe?
To make air fryer roasted zucchini(courgette) soup, toss the courgette, onion, potato, thyme and garlic with olive oil, salt, and pepper.
Transfer to the air fryer basket or a baking dish that will fit inside the air fryer. Bake at 180C for 16-18 minutes or until courgettes and potatoes are slightly.
In the mean while, dissolve 1 stock cube in 700 ml of hot water. Add the green peas and allow it thaw.
Once the veggies are roasted, Remove the thyme. Add the roasted veggies along with vegetable stock, peas and basil to a blender jar and puree the soup to a smooth and creamy consistency.
Serve soup hot with garnishes.
How to make Oven roasted courgette soup?
Preheat the oven to 180 C. Add courgettes, potato, onions, thyme and garlic in the baking dish. Generously drizzle olive oil. Sprinkle some salt and bake them for about 30-35 minutes until well roasted or until the courgettes just begin to char at the edges. Check every 10 minutes to avoid getting burnt.
In the mean while, dissolve 1 stock cube in 700ml hot water. Add the green peas and allow it thaw.
Once the veggies are roasted, Remove the thyme. Add the roasted veggies along with vegetable stock, peas and basil to a blender jar and puree the soup to a smooth and creamy consistency.
To make it indulgent, add a swirl of coconut milk or any dairy free cream, top it with garnishes. Serve with a warmed bread roll.
Storing leftover courgette soup in the fridge
If you have leftover roasted courgette and pea soup, it can be stored in an airtight container in the refrigerator for 3-4 days. When you’re ready to enjoy it again, you can reheat the soup on the stove or in the microwave.
Freezing the Courgette soup
If you plan to make large batches of this courgette and peas soup and freeze it for later, I recommend not using frozen peas in the recipe. Simply leave the peas out of the recipe, and you can freeze the courgette soup in containers. Label and enjoy it through the year.

Variants of my courgette pea and basil soup
Tomato and Courgette soup – In the peak of the summer, I like to change it up by using seasonal tomatoes. Add the tomatoes to the baking sheet along with rest of the veggies.
Red pepper and courgette soup – Add the red pepper, tomatoes, courgette, onion and garlic to the baking sheet and roast well. Then blend the roasted vegetables with stock until smooth and creamy.
Courgette and basil soup – Don’t like peas, leave it out and make a creamy basil courgette soup.
Roasted Spicy courgette soup – To make it spicy, add 1 jalapenos to the blender jar along with stock and roasted courgettes, roasted garlic, onion and herbs.

You really don’t need to peel the courgettes to make the soup. This recipe practically has got no waste and everything gets used up to make this healthy recipe.

- 660 g courgettes cut to juliennes 2 large
- 3 cloves garlic
- 150 g potato
- 100 g white onion sliced 1 medium
- 700 ml vegetable stock 3 cup
- 120 g frozen green peas 1 cup
- 1 sprig thyme
- 2 tbsp fresh basil
- salt to taste
- ½ tsp ground black pepper
- 2 tbsp olive oil

- 2 tbsp coconut milk or dairy free cream

- To make air fryer roasted courgette soup, toss the courgette, potato, onion, thyme and garlic with skin on with olive oil, salt, and pepper.
- Transfer to the air fryer basket or a baking dish that will fit inside the air fryer. Bake at 360F (180C) for 18-20 minutes or until courgette is well roasted.
- In the mean while, dissolve 1 stock cube in 700ml hot water. Add the green peas and allow it thaw.
