My Boys celebrate their birthday on the day before Valentine’s Day . Invariably that whole week goes in preparation and celebrations.

Last Year I made some Fluffy american Pancakes and some Chocolate Cake with Cream Cheese frosting for Valentine’s Day.. Till date these Pancakes are a hit at home and among my young readers. Chocolate Cake actually won me a prize in a competition too..  Its totally worth cherishing those moments.. Isn’t it?

As I said above its all about Red !!  I made some Red Velvet Cookies yesterday and some trial and errors with Red Velvet Pancakes.  Shh!!  Well I will not share anything further about it.. but one of my posts in the next fortnight will do the talking.

Coming to the pictures for this Post!! Phew… One Hour + literally went in vain shooting on white background. There was something not right about the lighting today.. that they looked like Mobile Picture Snaps.. Blimey!! I really can’t afford to post those pics that I actually went back and redid the whole set up – Changed the white to moody wood background… And everything changed.

I am so pleased that I didn’t give up at that minute, rather I attempted something yet again!  After nearly 3.5 hours of shoot, I am totally feeling contended.. One of those times when things go totally topsy turvy.

ALDI has been one of my favourite Supermarkets for the last few months… Since its not next door, I do visit only when I get to chance the high street in Feltham. Most of ingredients for this post were picked from ALDI. Thank you guys for spoiling me with collaborations like these.

TotalTime Taken 1 hour + Chilling time |Makes 18-20Nos

Red Velvet Crinkle Cookies

1.5 Cups Plain flour
2 Tblspn Unsweetened cocoa powder
1/4 + 2 Tsp Unsalted Butter
A pinch of Salt
3/4 Cup Caster sugar
1 Teaspoon vanilla extract
11/2 Teaspoon baking powder
1/4 Cup Dark Chocolate Chips
2 Tsp Red Food Color
2 Medium Sized Eggs
1/2 Cup Icing sugar

Whisk together dry ingredients – Flour,Cocoa Powder Baking Powder,Baking Soda and Salt.
To the stand mixer, fitted with whisk ,add Sugar & Butter and beat until pale and fluffy. Add One egg at a time , followed by vanilla extract and red food color.
Add the Dry ingredients to the Wet Ingredients and combine well. Fold in Chocolate Chips. Do not over beat.
Cling film the dough with the bowl and refrigerate overnight. Place Icing Sugar in a wide bowl.
Preheat the oven to 180°C and line two baking sheets with parchment paper.
Grease your palm with butter. Use a tablespoon to get small clumps of dough, make a quick ball in between your palm and roll them in the icing sugar bowl nicely. Place the dough balls onto the baking sheet spaced out well.
Repeat this process for the rest of the dough.
Bake in the Preheated Oven for 10 -12 minutes, until the top is just firm to touch. Allow the Red Velvet Crinkle Cookies to cool down before shifting them onto the wired rack.

Notes: Do not flatten the rolled cookies dough. The crinkles will not appear nicely. Chilling is a must for this recipe.
You may increase the food color by another a teaspoon if you find it pale.
