One evening after H returned from work, asked me if I have bought any energy bars from stores for his morning takeaway. This did kindle a thought deep inside me for the next two days. I was all geared to make him my NO Bake Oats Chocolate Granola Bars. But then I wanted to make something really quick and something without chocolate.

Right-o !!! A huge packet of Dates has been lying unused for the last few months and this was the opportunity to actually make something wonderfully tasty, healthy and purposeful.

What are ENERGY BALLS?

Dates, Granola, and Nuts it is! This recipe only took me 10 minutes to put together.. What actually took time was to actually pull out the ingredients and the intention to make it. I really don't know what took me so long to actually make it.

This recipe is NO Cook, No Bake and all it requires is a food processor to break the ingredients down coarsely. Before actually writing the perfect measurements for this recipe, I went on to make them with approx hand to eye measurements - One handful of Nuts each etc.. and added enough dates to bind them together. When the recipe & flavors as such came out well, I made my second batch in the next 15 minutes weighing out ingredients one after the other.
Bingo... Perfect recipe as I call it in my second attempt too.

I have tried using homemade granola and rolled oats and they both taste amazing. I would suggest you to use ingredients from your pantry that are readily available.

How to make Energy Balls at home?

To make these Energy Balls, I began pulsing the nuts and granola for a few minutes until they break down and obtain a coarse texture. Add the Pitted dates at this stage and process them for a few minutes until the dates break down and all the ingredients come together.
That is it!! Make small golf balls rolling them between your palms and store them in airtight containers.

Isn't it easy!!

Ingredients

  • 100 g Almonds⠀
  • 100 g Cashewnuts⠀
  • 100 g Granola of your choice or just Rolled Oats⠀
  • 500 g Dates pitted

Instructions

  • Blitz Almonds, Cashewnuts and Granola in your food processor until coarse. Add the Dates and process them together for 2-3 minutes until Dates is all broken down. ⠀
  • Empty them all into a mixing bowl and begin making small balls. I got about 32 of these #energyballs with this measurement.

Notes

To try for the first time, I would reckon you make them with half the portions of the listed ingredients.

    Would the dates need soaking ?

      You don't need to soak the pitted dates, as they break down well in the food processor. If you feel they are binding well, add 3-4 tbsp of warm water.
