Wash, peel, and dice the sweet potatoes. Toss them with a little oil, salt, and chilli powder.
Transfer to the air fryer basket and roast at 400F/ 200C for 10-12 minutes. Shake the air fryer basket at half-time, so that they cook evenly.
In a mixing bowl, add the roasted air fryer sweet potatoes, peanuts, onion, coriander leaves, green coriander chutney, tamarind chutney, cumin powder, kala namak , and chaat masala and mix them together.
Transfer to serving bowls. Then add the toppings - sev, pomegranate, onion and coriander leaves.
Serve immediately!

Optional - If you like add crushed chaat papdi and a drizzle of yogurt too!
