Berry Coconut Chia Seeds Layered Breakfast Cup

Its time to embrace some Berry Coconut-ty deliciousness for breakfast too ! And its V-E-G-A-N ..

This Little Beauty Berry Coconut Chia Seeds Layered Breakfast Cup comes together pretty quick, but with a teeny bit of preparation. Two Berry Coconut Smoothie layered on top of each other and finally finished with a  top layer of  Vanilla Coconut Chia Seeds Pudding..  Isn't it Coconut overloaded? And , I actually went a teeny bit overloaded with 4 layers of toppings - strawberries, blueberries, granola and almond flakes!! ?Well the choice is endless. ..Just skim through your pantry for some exotic choices.

For the last 2 weeks, I had been posting pictures of my travel to Dubai and from my archive on my instagram and other social media. Well I have a reason for it.
I had a minor accident while using a mandoline slicer about a week and half ago and a small portion of my finger is sliced up to my nails. This has been restricting my work to a large extent. It's healing now and thank god I have made a return to blogging. So yay!! This is kind of my come back post too 🙂   Hopefully I am able to keep up the spirit like before and post as often as possible.

During these two weeks, I have taken time to reconcile, work on bits of redecoration and re organisation at home.  With so much going on to keep us buzy, easy delicious carb free breakfast is also something I have been thinking. Layered Smoothie Jars, Overnight Oats Jars,  Chia Seeds Pudding nestled between  yogurt layers and what not. Above all, they are pretty quick and easy. Some require a bit of overnight soaking, some are instant!

We love Coconut Oil, Coconut Milk in our cooking and its our age old family traditions that these ingredients are an essence of our traditional meals. But never in our breakfast. And not to forget that we do use coconut oil for our skin and haircare routine.  So it was time, we welcome Vita Coco Coconut Milk Alternative, as an alternative choice to our breakfast table too.  It's deliciously smooth and dairy free - with plenty of calcium!

This recipe for Berry Coconut Chia Seeds Layered Breakfast Cup is an easy, no cook VEGAN breakfast with a little bit of planning. Soak the chia seeds in coconut milk and set it aside in your container overnight. That is all about the preparation stage.. Everything else could be made instantly like the Blueberry Coconut Smoothie and Raspberry Coconut Smoothie.

These vegan layered Chia Seeds breakfast pudding cups makes delicious tropical breakfast with berries and coconut.

Ingredients

Coconut Vanilla Chia Seeds Pudding

  • 4 tablespoon Chia Seeds
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Maple Syrup
  • 1 teaspoon Coconut Oil melted
  • 1 Cup  Coconut milk

Blueberry Coconut Smoothie

  • 1 Cup Blueberry frozen
  • 1 Cup coconut milk alternative
  • 1 teaspoon Maple Syrup

Raspberry Coconut Smoothie

  • 1 Cup Raspberry frozen
  • 1 Cup  coconut milk alternative
  • 1 teaspoon Maple Syrup

Toppings

  • Sliced Strawberries
  • Blueberries
  • Toasted Almond Flakes
  • Granola

Directions

    Coconut Vanilla Chia Seeds Pudding

    • Place ingredients for Chia Seeds Pudding in a container with lid and mix well. Keep them covered in the refrigerator and stir it every now and then until set. . Keep them refrigerated. Coconut Vanilla Chia Seeds Pudding will last up to 5-6 days. Just use as much as desired and pop the rest back in the refrigerator.

    Blueberry Coconut Smoothie

    • Blitz everything in a hi-speed blender and set them aside.

    Raspberry Coconut Smoothie

    • Wash the blender after Blueberry Smoothie. Blitz everything for Raspberry Smoothie in a hi-speed blender and set them aside.
    • If you do not have frozen berries, add ice cubes while blending.

    Assembly

    • Layer 3 tablespoon Blueberry Coconut Smoothie, followed by 3 tablespoon Raspberry Coconut Smoothie and finally 2 tablespoon of Coconut Vanilla Chia Seeds Pudding. Go wild with toppings of your choice.
    • Well I have 4 layers of toppings too - Sliced Strawberries, Blueberries, Toasted Almond Flakes and finally some Granola. Repeat the process with the other 2 cups..  You could play around with the layering too for some fun.
    • Enjoy the Berry Coconut Chia Seeds Layered Breakfast Cup !! Its nothing less than a good dessert 🙂

      I hope your finger is getting better Sandhya... That cut sounds pretty deep. I love berries not only do they make the sugar cravings go away they look stunning too... Love your pictures....
