I love easy dinner options and these fajita veggies with halloumi are my favourite fillings to make on busy days. While these are being made in the oven, I like to quickly whip chunky guacamole with avocado and prep the remaining elements. Then its just the case of assembling my fajitas.
The recipe is super simple. Simply toss peppers, onions, and halloumi cheese with your favorite seasoning spice , then bake until the vegetables are crunchy and the halloumi cheese is crispy. Tuck it into tortilla wraps or use in tacos, Buddha bowls, burritos, quesadillas, pasta, and more!

Ingredients for Halloumi fajita traybake
Mixed Peppers: I use red, yellow, and orange peppers, and slice them into inch-thick pieces. Don’t slice them too thin; keep that satisfying crunch! You can also cube them if you like.
Onion: Get one medium sized red onion for that extra crunchiness.
Halloumi Cheese: Cut the halloumi into inch-thick strips. It adds a tasty and hearty element to your fajitas.
Seasoning: You can use store-bought fajita seasoning, cajun seasoning or Oldbay seasoning for ease. Alternatively mix up your own at home for a personal touch. Homemade Fajita spice mix is made with ground garlic, smoke paprika, hot chili powder, ground cumin, coriander and oregano.
Oil: I use about 2 tsp of olive oil to toss the vegetables; just make sure there’s enough to cover them all evenly.
How to make Halloumi fajitas traybake?
Prep Halloumi and veggies: Start by slicing bell peppers and red onion, and cutting the halloumi cheese into strips. Add the veggies and halloumi with your favourite fajita seasoning to an oven safe dish and toss together.
Oven instructions: Preheat the oven to 210C / 190C fan . Place the oven proof dish into the oven and bake for 20-25 minutes until the peppers are crunchy and the halloumi is golden.
Load up Tortillas and add toppings: Once the halloumi fajita mixture is perfectly cooked, assemble your fajitas. Warm the corn tortillas or tortilla wraps in the microwave for a few seconds or on a skillet. Spoon the fajita halloumi and veggies onto the warm tortillas, distributing them evenly.
I like to add shredded lettuce, dollops of sour cream, guacamole, jalapeños and a sprinkle of fresh cilantro. And finally serve with lime wedges.

- 225 g Halloumi cheese cut into sticks
- 3 mixed bell peppers red yellow and orange
- 1 red onion sliced
- 2 tbsp Fajita seasoning
- 2 tsp Olive oil
- Choice of Toppings: Shredded lettuce Guacamole, Sour cream, Fresh coriander, Lime
