The One-Pan Halloumi Traybake I Keep Making on Busy Weeknights

I love easy dinner options like traybakes—think sausage and potato traybake or even an aloo gobi traybake. Especially on busy weeknights, when meals need to come together quickly with minimal prep and whatever’s in the fridge. That’s exactly what this one-pan Halloumi Fajita Vegetables Traybake delivers.

As soon as it’s out of the oven, I like to serve it with chunky guacamole, sour cream, and fresh lettuce.

Why This Roasted Vegetables and Halloumi Traybake Is So Good

  • Uses very little oil – A lighter option compared to traditional sautéed fajita mixtures.
  • Easy to customise – Swap the veggies, tweak the seasoning, or adjust the spice level to suit your taste.

Ingredients & Substitutions

Here's what you'll need (measurements are in the recipe card):

Ingredients for Veggie fajita
  • Red, yellow, and orange peppers: Don’t slice them too thin. Slice them into inch-thick pieces or cubes.
  • Onion: I use red onion for that extra crunchiness. Use any that you have at hand.
  • Halloumi Cheese: Cut the halloumi into 1 inch-thick strips.
  • Fajita Seasoning: I use store-bought fajita seasoning. You can also vary with cajun seasoning, Oldbay seasoning or garam masala. If you want to make Homemade Fajita spice mix - simply mix ground garlic, smoke paprika, hot chili powder, ground cumin, coriander and oregano.
  • Oil: I use about 1 tablespoon of olive oil just enough to cover them all evenly.

How to Make Halloumi traybake?

Step 1. Add the veggies and halloumi with your favourite fajita seasoning to an oven safe dish.

Step 2. Toss together and Bake in the oven at 210°C (190°C fan) for 20-25 minutes until the peppers are crunchy and the halloumi is golden.

How to Turn Halloumi Tray Bake into Fajitas

Warm the tortillas in the microwave for a few seconds or on a skillet. Spoon some shredded lettuce, chunky guacamole, and the cooked halloumi tray bake with veggies onto each tortilla. Top with sour cream, jalapeños, and a sprinkle of fresh coriander. Serve with lime wedges on the side.

Sandhya's Expert Tips

  • Slice halloumi uniform, so they cook evenly.
  • Pat the halloumi dry before baking to absorb excess moisture.
  • Serve warm right after baking for the best texture and taste.

What Else Can You Add to Your Halloumi Traybake?

The options are endless! I like to keep it colourful with classic veggies like peppers and onions, but zucchini, mushrooms, and aubergine work great too.

For extra protein, toss in some tofu, extra halloumi, or paneer. Beans like black beans, kidney beans, or chickpeas add texture and flavour, making the dish more filling.

Toppings to use for a Halloumi Fajita?

Toppings are just as important as the filling—they really bring the whole dish to life. I usually stick to 2-3 toppings for a balanced flavour punch. Here are some of my favourites:

  • Guacamole
  • Sour cream or Sour Cream Chives Dip
  • Shredded lettuce
  • Grated cheddar cheese
  • Fresh tomato salsa
  • Fresh coriander (cilantro)
  • Pickled jalapeños
  • Lime wedges

My go-to combo is lettuce, guacamole, sour cream, and chopped jalapeños, finished with a squeeze of lime for that perfect zing.

Leftovers & Storing

  • In the Fridge: Store any leftovers in an airtight container for up to 5 days.
  • To reheat: Place in a microwave-safe dish and heat on medium for 1–2 minutes, or until warmed through.

Can I Make Halloumi Fajita in Advance?

Yes certainly. Cook the halloumi and vegetable fajita mixture ahead. Prep the remaining toppings and then assemble the fajita just before serving.

Can you Tray Bake Halloumi?

Absolutely! Halloumi holds its shape beautifully in the oven /air fryer, thanks to its high melting point.

What is Halloumi made of?

Halloumi is a semi-hard Cypriot cheese traditionally made from sheep's and goat's milk, though sometimes just sheep’s milk. It has a salty, meaty flavour and a high melting point, making it perfect for grilling or frying. We love it in salads, sandwiches, fries, or simply on its own.

How long can I keep halloumi tray bake in the fridge or freezer?

You can keep the leftover halloumi tray bake in the fridge for up to 3 days in an airtight container. Reheat well before serving. I don’t recommend freezing it, as the peppers and onions tend to become soggy after defrosting.

Ingredients

  • 225 g halloumi cheese cut into sticks
  • 3 mixed bell peppers red yellow and orange
  • 1 medium red onion sliced
  • 2 tablespoon fajita seasoning
  • 1 tablespoon Olive oil

Fajita Toppings

  • Shredded Lettuce, Guacamole,Sour cream, Fresh coriander, Lime

Instructions

  • Preheat the oven to 210°C (190°C fan)
  • Add the sliced peppers, onion, halloumi cheese, fajita seasoning, and olive oil to a baking dish. Toss them together until well combined.
  • Transfer the prepared vegetarian fajita mixture to the oven and bake for 20-25 minutes until veggies are tender, crunchy, and the halloumi cheese turns golden.
  • Once the veggies are ready, warm the tortilla. Add the lettuce, guacamole, sour cream, and top with the fajita mixture. Sprinkle with coriander leaves and serve with lime. Enjoy your delicious and easy-to-make vegetarian air fryer fajitas!
