Ingredients & Substitutions
Here's what you'll need (measurements are in the recipe card):

- Red, yellow, and orange peppers: Don’t slice them too thin. Slice them into inch-thick pieces or cubes.
- Onion: I use red onion for that extra crunchiness. Use any that you have at hand.
- Halloumi Cheese: Cut the halloumi into 1 inch-thick strips.
- Fajita Seasoning: I use store-bought fajita seasoning. You can also vary with cajun seasoning, Oldbay seasoning or garam masala. If you want to make Homemade Fajita spice mix - simply mix ground garlic, smoke paprika, hot chili powder, ground cumin, coriander and oregano.
- Oil: I use about 1 tablespoon of olive oil just enough to cover them all evenly.
How to Make Halloumi traybake?

Step 1. Add the veggies and halloumi with your favourite fajita seasoning to an oven safe dish.

Step 2. Toss together and Bake in the oven at 210°C (190°C fan) for 20-25 minutes until the peppers are crunchy and the halloumi is golden.
How to Turn Halloumi Tray Bake into Fajitas
Warm the tortillas in the microwave for a few seconds or on a skillet. Spoon some shredded lettuce, chunky guacamole, and the cooked halloumi tray bake with veggies onto each tortilla. Top with sour cream, jalapeños, and a sprinkle of fresh coriander. Serve with lime wedges on the side.

For extra protein, toss in some tofu, extra halloumi, or paneer. Beans like black beans, kidney beans, or chickpeas add texture and flavour, making the dish more filling.

Halloumi is a semi-hard Cypriot cheese traditionally made from sheep's and goat's milk, though sometimes just sheep’s milk. It has a salty, meaty flavour and a high melting point, making it perfect for grilling or frying. We love it in salads, sandwiches, fries, or simply on its own.
You can keep the leftover halloumi tray bake in the fridge for up to 3 days in an airtight container. Reheat well before serving. I don’t recommend freezing it, as the peppers and onions tend to become soggy after defrosting.
