WHAT IS LAUKI?
Lauki is otherwise known as Bottle gourd squash or Opo Squash in English, and is known for its numerous benefits! It is one of the lowest calorie vegetables – carrying just 14 calories per 100 g.
It also known as Ghiya, Doodhi or Bottle Gourd too! How amazing isn’t it!

Raita as such is another name for Yogurt Condiment, made with Yogurt & fresh vegetables/ fruits along with spices. It is best served chilled along with the main dish.

LAUKI KA RAITAÂ RECIPE BELOW
Ingredients
- 1 Cup Lauki - Bottle Gourd grated or cubed
- 2 Cups Yogurt
- 1/2 Cup Mint Leaves
- 1 Green Chilli { optional }
- 1/2 Tsp Cumin Powder
- 1/2 Tsp Chaat Masala
- 1/2 Tsp Black Salt or Normal Salt
Seasoning
- 2 Tsp Oil
- 4 Garlic Cloves thinly sliced
- 1/8 th Tsp Chilli Powder
Instructions
Cook the Lauki
- Grate the Lauki using the coarse end of the grater. Place them in a pot of hot water and boil for 7-8 minutes until soft.
Drain the water and place the cooked lauki in the fine mesh sieve. Using the back of the spoon, press the cooked vegetable until most of the water is drained.
Prepare Lauki Mint Paste
- Place the cooked lauki, mint leaves, green chilli in a blender and process until smooth.
Lauki ka Raita
- In a large bowl, add the yogurt and whisk them smooth.Add lauki- mint paste to the yogurt along with spice powders & salt. Whisk until well combined.
Seasoning
- Heat oil in a small pan, add the garlic cloves and saute until they turn golden brown. Drain the cloves to a bowl. Add the chilli powder and quickly turn off the flame.
- Add the seasoning to the prepared Lauki ka Raita. Serve them immediately or place them in the refrigerator to chill until you are ready to serve.
