About this really easy Oven-roasted Sausage and Potato traybake
What’s for dinner? This really easy one-pan traybake recipe has cooked sausages, crispy mini potatoes, onion, and sweet peppers tossed with my homemade Mediterranean marinade, and features regularly on our dinner menu.
Because it is so simple, fuss-free, and requires very little prep. Like most dinner traybake recipes, this Vegetarian sausage potato traybake is as easy as chop, throw and forget.
I like to use the supportive Vegetables I have at hand. In this case peppers and onions and herbs from my garden to go along with sausages and potatoes.
My kids happily tuck into these, without any complaints! If you have extra sausages, you can make Air fryer Sausages, Sausage, and Tortellini soup.

Budget-friendly recipe – This traybake uses easy-to-find ingredients from the supermarket, that are really cheap. Use the vegetables and seasoning you have at hand and the ones that pair well with sausages.
Healthy and full of flavors – I like to use a flavorful marinade to go along with the sausages and potatoes and some vegetable stock for a little sauce.
Versatile – It is a perfect Midweek meal dinner in a hurry. Also, it’s a fantastic meal for Thanksgiving / Christmas.

Ingredients for Sausage and Potato bake
Sausages – Choose your favorite sausages. I like to use Quorn Cocktail sausages or Linda Mccartney sausages for this recipe.
Potatoes – I like to use halved mini potatoes as they require minimum preparation.
Peppers – Use a combination of red and yellow pepper or just one. I would not recommend using green pepper for this recipe.
Onion – Red Onion tastes so much better, although you can use white too.
Garlic – Use Fresh minced garlic or 1 tsp garlic paste or 1 tsp garlic powder.
Oil – Use any neutral flavor oil.
Seasoning – My preference is Old Bay seasoning or Taco seasoning. Old bay seasoning is easily available at Costco in the UK. Taco seasoning is available at most local supermarkets.
Salt and Pepper to taste
Stock – Use 1 vegetable stock cube dissolved in 240ml of hot water. Alternatively use 1 cup of homemade vegetable stock.
Herbs – The recipe uses fresh herbs like thyme as well as dried Italian herbs.
How to make Vegan Sausage and Potato tray bake?
It is really easy to make a Sausage traybake with potatoes and peppers at home.
Prep the vegetables – Preheat the oven to 200C. While the oven is preheating, we will be chopping the potatoes into halves, peppers into chunks, and onion into wedges.
Make the marinate – Combine the ingredients in a small bowl.
Throw on a baking tray -Now we add the vegetables to a baking tray.
Add the Marinade – Pour the marinade on the potatoes, peppers and onion.
Toss together – Using hands or tongs, toss the vegetables until they are well coated with the marinade. Arrange the sausages on the top and coat it with the marinade.
Bake – Place the baking tray on the middle rack and bake in a preheated oven for about 15 minutes.
Add the stock – Pour the hot stock into the tray, return the tray to the oven, and bake for another 20 minutes. You may find the stock a bit weird in a traybake. But they work like a sauce when serving the sausages and potatoes.

Storage
Our Easy Sausage Potato traybake keeps well for up to 2 days in the fridge. We always make extra portions to enjoy for lunch the next day.
To reheat – I prefer to place the leftovers in an oven-proof bowl and heat it in the oven for 15 minutes or so. This retains the textures of the sausages and potatoes. For quick reheating place it in the microwave and heat thoroughly before serving.
Serving suggestions
I love serving these sausages and potatoes on their own for an easy dinner option. For an elaborate meal, I prefer to serve it with a pasta dish or cauliflower fried rice.

Ingredients
- 6 Vegan Sausages
- 300 g Potatoes
- 2 Peppers cut into chunks
- 1 large red onion cut into quarters
- 300 ml Vegetable Stock
Marinade
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 tsp Paprika
- 1 tsp Old Bay seasoning or Taco Seasoning
- Salt to taste
- 1/2 tsp Black pepper
- 1 tsp Italian herbs
Instructions
- Preheat the oven to 200 C / 180 fan-assisted oven / 400F.
- Place the potatoes, peppers, onion and herbs in a large baking tray except the vegetable stock.
- In a small bowl, combine olive oil, garlic, paprika, old bay seasoning, salt, pepper, and Italian herbs.
- Pour this mixture on the sausages potatoes, peppers, and onion. Use your hands or two large spoons to toss everthing, so it well coated. Rearrange everything, so that the sausages are placed on the top.
- Place the tray in the oven and bake for 15 minutes.
- After 20 minutes, remove the tray from the oven, flip the sausages around. Pour the stock and cook for a further 20 minutes or until everything is cooked.
- Garnish with thyme and serve.
