What’s for dinner? This easy one-pan traybake is full of cooked sausages, crispy mini potatoes, onions, and sweet peppers, all tossed in my homemade Mediterranean marinade.
It takes only 10 minutes or prep and that's why it’s one of our regular go-to dinners like tarka dal served with brown basmati rice. It’s so versatile that it also makes a delicious traybake for Thanksgiving or Christmas.

💛The One Sheet Pan Sausage and Potato Traybake We Can’t Stop Making
It’s so simple and fuss-free, taking just around 10 minutes of prep. Just like our tomato gnocchi traybake, this vegetarian-friendly sausage and potato traybake is all about chop, toss, and forget.
I usually use whatever vegetables I have on hand. This time, I added peppers, onions, and some herbs from my garden — they pair perfectly with the sausages and potatoes, and are easy to find.
The kids happily tuck in every time, no complaints! And if I happen to have extra sausages, I like to turn them into a quick Sausages and Tortellini Soup or just air fryer sausages.

- Use a big roasting dish – Spread everything out so it roasts instead of steaming. I use a 40 x 27.2 x 8.3 cm stoneware dish.
- Place the sausages on top – They cook more evenly this way.
- Stir halfway through – Helps the sausages cook evenly and prevents sticking.
- Add stock in the last 20 minutes – Creates a lovely sauce for the sheetpan sausage and potatoes.
- Great for meal prep – Double the batch and enjoy leftovers for lunch or dinner.

- Sausages – Use your favorite. I often go for Quorn cocktail sausages or Linda McCartney Vegan Sausages. Turkey, chicken, or pork sausages also work beautifully here.
- Mini potatoes – Just halve them and toss straight onto the tray. They roast quickly and turn golden on the edges.
- Peppers – Red and yellow work best. I skip green peppers for this recipe
- Onion – Red onion gives a sweeter flavor, but yellow onion works too.
- Garlic – Fresh minced garlic is great, or swap with 1 teaspoon garlic paste/powder.
- Neutral Oil – Any is fine.
- Seasoning – I like Old Bay (Costco has it in the UK) or Taco seasoning from most supermarkets.
- Salt & pepper – To taste.
- Stock – 1 vegetable stock cube in 240 ml hot water, or 1 cup homemade stock.
- Herbs – A mix of fresh thyme and dried Italian herbs.
🔪How to make Vegan Sausage and Potato Traybake?

Step 1. Preheat the oven to 200C. While the oven is preheating, chop the potatoes into halves, peppers into chunks, and onion into wedges. Add them to a baking tray.

Step 2. Combine the Mediterranean marinade in a small bowl and then add it over the veggies. Combine with hands or use tongs.

Step 3. Arrange the sausages on the top and coat it with the marinade. Bake in the oven for 15 minutes.

Step 4. Pour the stock into the tray, and bake for another 20 minutes. Serve hot and enjoy.
Pro Tip: You may find the stock a bit weird in a traybake. But they work like a sauce when serving the sausages and potatoes.

I love serving these sausages and potatoes on its own for an easy dinner option. For an elaborate meal, I prefer to serve it with a marry me chickpeas or cauliflower fried rice.
🧂Storage
In the Fridge: This easy sausage and potato traybake keeps well in an airtight container for up to 3 days. I often make a little extra so we can enjoy it for lunch the next day too.
Reheating: I usually pop the leftovers into an ovenproof dish and warm them in the oven for about 15 minutes, or in the air fryer for 7–8 minutes. This way the sausages stay juicy and the potatoes keep their crisp edges. If I’m short on time, I just use the microwave — I just make sure everything is piping hot before serving.

Ingredients
- 6 Vegan Sausages
- 300 g Potatoes
- 2 Peppers cut into chunks
- 1 large red onion cut into quarters
- 300 ml Vegetable Stock
Marinade
- 3 tablespoon olive oil
- 4 cloves garlic minced
- 1 teaspoon Paprika
- 1 teaspoon Old Bay seasoning or Taco Seasoning
- Salt to taste
- ½ teaspoon Black pepper
- 1 teaspoon Italian herbs
Instructions
- Preheat the oven to 200 C / 180 fan-assisted oven / 400F.
- Place the potatoes, peppers, onion and herbs in a large baking tray except the vegetable stock.
- In a small bowl, combine olive oil, garlic, paprika, old bay seasoning, salt, pepper, and Italian herbs.
- Pour this mixture on the sausages potatoes, peppers, and onion. Use your hands or two large spoons to toss everthing, so it well coated. Rearrange everything, so that the sausages are placed on the top.
- Place the tray in the oven and bake for 15 minutes.
- Remove the tray from the oven, flip the sausages around. Pour the stock and cook for a further 20 minutes or until everything is cooked.
- Garnish with thyme and serve.
