Until a few years back, I always thought baking bread from scratch was difficult and required a lot of skill! With all the mixing, kneading and proofing – there is so much work and a lot of waiting time! Thanks to Instant Pot – everything has changed!

Imagine the comfort of enjoying freshly baked bread with a handful of pantry essentials. No Kneading required at all! This bread is not just for festive occasions but everyday too!
Don’t have Instant Pot Pressure Cooker – no worries! Make the No Knead bread dough as per the instructions, cover and allow the dough to rise for 5-6 hours and till you see bubbles on the top. Rest of the instructions are just the same!

TIPS FOR MAKING EASY ARTISAN INSTANT POT BREAD
Use a weighing scale to have accurate measurements for your Ingredients. Depending upon how loosely packed or tightly packed you measure the flour in cups, it will vary!!
Always measure out the ingredients in a large bowl, so you can speed up the process at the time of making the recipe. Keep in mind, the quantity of flour will vary depending upon the location and weather. You might even need to add more flour or less flour depending upon the humidity and altitude.
Check for the expiry for the Yeast. Yeast plays a core role in our bread recipe, so it is utmost important in having valid date yeast.
Proofing the Dough is utmost essential step. I love proofing this No Knead bread dough in the Instant Pot as the proofing time is cut down by more than 3 hours. You can proof the dough in a Greased Bowl. Cover the bowl with plastic wrap/ cling film and set aside in a warm place to rise until doubled in size and bubbly
Both the methods work really well. However I love using Instant Pot as it cuts down the proofing time by half.
Second Rising is equally important. Do not skip this step! After the first rise of the dough has completed, punch it back and shape it gently into a ball. Transfer it back to Instant Pot and proof it for 30 minutes.
Bake in Dutch Oven – Dutch oven (with lid) is the perfect pot for making artisan style loaves! I have used a Denby Pomegranate Cast Iron 24Cm Round Casserole .Steam generated inside the dutch oven miraculously transforms the dough into a bread – making sure the bread’s crust will shatter into delicate shards with each bite.
Ingredients you will need for making Instant Pot Bread
Plain Flour or All Purpose Flour or Bread Flour – I do make this No Knead bread with Plain Flour and Bread flour, depending upon what is available at hand.
Instant Yeast – Do Check out the expiry
Warm Water – Temperature of the water should be approximately 105F. A little approximate is great. Do not use too much hot water as it can kill the heat.
Olive Oil – Good quality Extra virgin oil adds good flavor to this bread.
Salt
Sugar
Optional Mix ins – Use Herbs, nuts, spices as optionals. I like to use rosemary as they are in plenty in my garden.
HOW TO MAKE NO KNEAD BREAD STEP BY STEP
PREHEAT OVEN & DUTCH OVEN -In the meanwhile, preheat the oven to 450F and place a 4 Quart Dutch oven in middle rack of the oven.
BAKE FOR 30 MINUTES – Score the bread about 1/2 inch deep 2 – 3 times. ( optional ). Once 30 minutes is up, lift the ends of the parchment paper to pick the dough from the Instant Pot and place it into the hot Dutch oven. Cover the dutch oven and place it back in the oven to bake for 30 minutes covered.
HOW TO STORE HOMEMADE BREAD?
How to Store Homemade Artisan Style Bread Loaves:
- Allow the bread loaves to cool completely. Slice and enjoy with warm butter or soups. For the remaining , store the bread at room temperature in a cool place for up t0 2-3 days.
- I like to store the bread in airtight zip loc plastic bags – they stay soft!
- Remember – Hot and Humid Weather can cause the artisan breads to stale and mould quickly.
How to Freeze Homemade Baked Bread:
Allow the bread loaves to cool completely before freezing.
Slice and store the bread in airtight freezer safe plastic bags for up to 3 months. They are quite handy.
To Thaw, remove the bread and allow it to thaw overnight in the refrigerator. Place the bread in a preheated oven for 3-5 minutes at 180C.
How to Defrost Bread Quickly?
I like to place the frozen bread slice in my toaster and toast it an extra minute or two.

Ingredients
- 450 g Plain Flour or All Purpose Flour ( 3 ¾ Cup )
- 7 g yeast ( 2 ¼ tsp )
- 340 g warm water ( 1 ½ Cup )
- 1 tsp salt
- 1 tsp sugar
- 3 tbsp olive oil
- 1 tbsp rosemary optional
Instructions
- In a large mixing bowl, add flour, yeast, salt & sugar. Stir to combine. Add the water and olive oil and mix with a spatula until the you have a rough sticky dough.
- Oil the inner pot of the instant pot and transfer this prepared dough. Cover with glass lid. Select the Yogurt Setting and set the time to 3 hours. After the 3 hours, cancel the yogurt setting. Open the lid to see the raised bread dough with dotted bubbles.
- Deflate the dough by punching down lightly. Transfer the dough to the parchment paper dusted with flour. Shape them gently into a smooth tight ball. Sprinkle herbs like rosemary if you fancy.
- Lift the end of the parchment paper and place it back in the Instant Pot. Cover with lid. Once again Yogurt Setting and set the time to 30 minutes.
- In the meanwhile, preheat the oven to 450F and place a 4 Quart Dutch oven in middle rack of the oven.
- Slash the bread about 1/2 inch deep 2 – 3 times. ( optional ). Once 30 minutes is up, lift the ends of the parchment paper to pick the dough from the Instant Pot and place it into the hot Dutch oven. Cover the dutch oven and place it back in the oven to bake.
- Bake the No Knead Bread for 30 minutes, covered.
- After that remove the lid and bake for 10 -15 minutes or until the top is golden brown.
- Remove the Dutch oven from the oven and use the parchment paper to transfer the bread to a wire rack. Let the bread cool for at least 15 minutes before slicing the bread.
- Store the left over bread in plastic bags for up to 3 days.
