QUICK & EASY GARLIC KNOTS FROM SCRATCH
With two hungry kids at home, I have been baking non stop right from eggless mango cake, 30 minutes fairy cakes, one bowl chocolate cake, naan pizza to these delicious garlic knots. These warm knots have been one of our favourite family treats, specially when its painted with generous serving garlic herb butter! So delicious.
We love garlic dough balls from Pizza Express and the Garlic knots (classic Italian pizzeria snack) that our local pizzeria serves. To make up for our cravings, I made these garlicky butters knots and brushed them with melted butter, garlic and parsley.
This recipe is simply straightforward and with easy steps to follow! A little bit adapted from my Dinner rolls recipe!

Let me tell you, A basket loaded with garlic knots is a perfect party appetiser. It’s not just the guests, you will also be reaching out for some. You can also make these with store bought pizza dough too!

Tips for making the Best Garlic Knots from scratch
- Measure out the ingredients in a large bowl, so you can speed up the process at the time of making the recipe. Keep in mind, the quantity of flour will vary depending upon the location and weather. You might even need to add more flour or less flour depending upon the humidity and altitude.
- Check for the expiry for the Yeast. Yeast plays a core role in our bread recipe, so it is utmost important in having valid date yeast.
- Proofing the Dough is utmost essential step. You can proof the dough in the Instant Pot or in a Greased Bowl. Both the methods work really well. However I love using Instant Pot as it cuts down the proofing time by half.
- Second Rising is equally important. Do not skip this step! Once the first rise of the soft dough has completed, punch it back and shape the dough into knots and allow them to rise until they puff up a bit.
- I have tried making these delicious warm knots without second rising before and let me tell you, these look so deflated!
- Brushing with Garlic Herb Butter – I love brushing the knots twice with herbed butter for double flavors. Not only do they add a gorgeous sheen, they add so much deliciousness.
- Check the rolls between 14-20 minutes. Bake for 18-20 minutes or until top is golden brown. If you find the rolls getting dark at 14 minutes, cover them with a foil and bake for the remaining time.

INGREDIENTS TO MAKE GARLIC KNOTS
To make Soft Garlicky Buttery Rolls, you will need the following ingredients that are easily available in most households.
- Flour: I use Plain flour or All-purpose flour to make garlic knots.
- Warm Water: Measure out the water and ensure its temperature falls between 100-110°F (37-43°C). This temperature range is optimal for activating the yeast and aiding in dough rising.
- Instant Yeast: I use Instant Fast Action Dried Yeast for convenience and time-saving benefits. This type of yeast doesn’t require activation in water before incorporating it into the dough.
- Baking Powder: Adding 1/2 a teaspoon of baking powder to the rolls dough contributes to a lighter texture, resulting in soft and fluffy knots. This addition enhances the overall taste and texture of the rolls.
- Salt: Salt plays a role in regulating yeast activity and strengthening gluten formation in the dough.
- Sugar: Apart from adding sweetness, sugar also aids in yeast activation.
- Olive Oil: Incorporating olive oil into the dough adds moisture, richness, and flavor.
FOR THE MELTED GARLIC BUTTER, you will need
- Butter – I prefer unsalted butter.
- Garlic – I prefer fresh minced garlic for fresh garlicky flavors, but you can use garlic powder too!
- Fresh Parsley – You can use minced basil for a change too! They are just as good as Fresh Parsley.
- Fat Pinch of Salt
HOW TO MAKE GARLICKY BUTTERY KNOT ROLLS STEP BY STEP?

STEP 1 – KNEAD THE DOUGH
Combine the ingredients together to knead into a soft dough. Use a Stand mixer or knead by hand – either ways knead until soft.
STEP 2 – PROOF THE DOUGH IN THE INSTANT POT
Grease the Inner Pot of the Instant Pot with oil. Transfer the kneaded dough in the greased pot.
Cover with a Glass Lid. Select the Yogurt Setting on the Instant Pot. Adjust the timer to 30 minutes.
After 30 min, the dough will double in size. Deflate the dough by punching down lightly.
PROOF THE DOUGH
If you don’t have an Instant Pot, proof the dough in a greased bowl and tuck it away in a warm place.
Grease a large bowl and transfer the kneaded dough to the bowl. Cover the bowl with plastic wrap or damp towel. The dough rises double the size in a warm place for 1 – 1 1/2 hour. Remove the cling film/ plastic wrap. Deflate the dough by punching down lightly.
STEP 3 – PREPARE HERBY GARLIC BUTTER
When the garlic rolls are baking, prepare the herb garlic butter.
Melt the butter in the microwave safe bowl. Combine minced garlic, fresh minced parsley and salt and stir to combine.
I love to generously brush the garlic knot rolls twice! Once before they are getting baked and the second time when the garlic knots are just out of the oven. Garlic knots absorb the herb butter as they settle down.
These are best served warm, but are good at room temperature, too.
STEP 4 – SHAPE THE DOUGH & FORM THE KNOT
On a lightly floured surface, shape the dough into a log roughly 15 inches long.
Using a pizza cutter or bench scraper, Divide them into 15 portions. Roll each strip into a long rope. Tie each into a knot. Tuck the ends of the knots underneath or leave it as it is.
STEP 5 -SECOND RISE
Transfer all the shaped knots to a baking sheet lined with parchment paper.
Cover with soft towel and allow for a second rise. This can take anywhere from 20 – 30 minutes. They will slightly puff up! Do not skip the Second rise – as this yields soft garlic knots.
Brush the roll knots with generous serving of garlic butter topping.
STEP 6- BAKE THE GARLIC KNOTS
Preheat oven to 200 C / 400 F. Position the Tray into the middle shelf of the oven and bake the rolls for 18-20 minutes until cooked through or until the top is golden brown.
If the rolls are getting a bit brown quicker, tent them with a foil sheet and continue to cook.
Remove from the soft knots from the oven and brush the warm knots with remaining garlic butter. {This is optional} but I would not miss this!
WHY PROOF THE BREAD DOUGH IN THE INSTANT POT?
I love proofing bread dough in the Instant Pot – because it is time saving! Instant pot provides warm atmosphere for the dough to proof – irrespective of the location.
Bread Dough prooving can generally take 60-120 minutes when tucked away in a warm place. However with the Instant Pot, you can speed up the proofing(fermentation process) in 30 – 40 minutes.
NOTE – If your Instant Pot does NOT have a YOGURT BUTTON, then you can ferment the dough in a warm place.

Easy Garlic Knots Recipe
Equipment
- Instant Pot 6 Qt
- Glass Lid
Ingredients
- 3 ½ Cup Plain Flour or All Purpose Flour
- 2¼ tsp or 7g Fast Acting Instant Yeast
- 1 tsp Salt
- 1 Tbsp Sugar
- ½ Tsp Baking Powder
- 3 Tbsp Olive Oil
- 1 ⅓ Cup Warm Water
Garlic Butter Topping
- ¼ Cup Unsalted Butter melted
- 2 Tbsp Fresh Parsley, finely chopped
- 3 Cloves Garlic, minced
- ¼ Tsp Salt
Instructions
STEP 1 – KNEAD THE DOUGH
- Add flour, salt, sugar, yeast, baking powder to the mixing bowl and stir to combine.
- Add water in 2 instances and stir to combine to a rough shaggy dough with a silicone spatula.
- Knead the dough using a stand mixer until well combined.
- Add the 2 tbsp olive oil to the dough and knead for another 2 minutes until well incorporated.
- Alternatively to knead by hand, add all the ingredients in a bowl and knead until soft. This can take up to 20 minutes.
STEP 2 -HOW TO PROOF THE DOUGH ?
- Grease a large bowl and transfer the kneaded dough to the bowl. Cover the bowl with plastic wrap or damp towel. Allow the it rise for 1 – 1 1/2 hours at room temperature or until it doubles the size.
- Remove the cling film/ plastic wrap. Deflate the dough by punching down lightly.
HOW TO PROOF DOUGH IN INSTANT POT?
- Grease the Inner Pot of the Instant Pot with remaining 1 tbsp oil.
- Place the dough in the greased pot. Cover the dough with glass lid.
- Select the Yogurt Setting and set the time to 30 minutes. After the 30 minutes, cancel the yogurt setting. Open the lid to see the raised garlic knot dough.
- Deflate the dough by punching down lightly.
STEP 3 -GARLIC BUTTER TOPPING
- Melt the butter in a microwave. Add the remaining ingredients to the butter. Stir to combine.
- Alternatively, If you like, melt the butter in a pan. Add the minced garlic and allow it to infuse for 2 minutes. Add the minced parsley and salt. Stir to combine.
STEP 4- SHAPE THE DOUGH
- On a lightly floured surface, shape the dough into a log roughly 15 inches long.

- Cover and store any leftover knots at room temperature for up to 2 days or in the refrigerator for up to 1 week. Place them in the microwave and heat them before serving.

Wow, just wow, my 1st attempt at these and the wife said OMG, these are amazing, they are was so fluffy and light, I cant wait to expirement with more flavours, I used vegan flora butter and coriander for the garlic butter and guess what………. I even threw in a frozen garlic cube.
